Instant Pot Cold Start Yogurt | Fairlife Yogurt

This Instant Pot Cold Start Yogurt is the easiest homemade yogurt recipe ever! Use the Instant Pot cold start or no boil method to make thick and creamy yogurt using ultra-pasteurized milk; Fairlife brand is best. There’s no need to heat or boil the milk. Just add the yogurt starter to the milk and let it incubate (ferment).

Introduction

I grew up in a household where yogurt was made fresh every single day and still is. The yogurt starter culture my mom uses has been passed down through generations and yogurt is part of every lunch and dinner.

So, how does yogurt form? Yogurt is formed when the bacteria (in yogurt starter) feed on the milk sugar in the milk to form lactic acid, and that causes the proteins in the milk to thicken. The lactic acid gives yogurt its tang.

You only need two ingredients to make yogurt: milk and yogurt culture. The yogurt culture or starter provides the spark to get the milk to change into yogurt. The starter can be commercial store-bought yogurt or freeze-dried yogurt culture.

There are a few ways to make yogurt in the Instant Pot. The traditional way to make yogurt is to boil the milk, let it cool, stir in yogurt starter and let it ferment. I’ve shared this method, with a twist, when I showed you how to make Instant Pot yogurt in individual jars.

Another way to make yogurt is to skip the boiling and cooling, and add yogurt starter directly into cold milk.

In this recipe, I’ll be sharing with you the second method, which I discovered through the Instant Pot Facebook group. It’s known as Instant Pot Cold Start Yogurt and I love making Instant Pot yogurt using cold start because the yogurt is so thick and creamy and the recipe is easy and fool-proof.

Pasteurized vs Ultra Pasteurized Milk

The regular Instant Pot yogurt recipe (the boil method) uses pasteurized milk. However, with the cold start Instant Pot yogurt method, you’ll be making yogurt with ultra pasteurized milk (preferably also ultra filtered.)

So why does making Instant Pot yogurt the no boil way require ultra pasteurized milk? It’s because pasteurized milk has native cultures (bacteria) and since you’re not boiling the milk, the native cultures would compete with the yogurt cultures, resulting in thin or runny yogurt.

If you’re wondering what the difference is between pasteurized, ultra pasteurized, and ultra filtered milk, here’s a quick summary:

Pasteurized Milk

Pasteurized milk undergoes a High Temperature Short Time (HTST) pasteurization process. HTST pasteurization heats the milk to 161 degrees Fahrenheit for 15 seconds and then rapidly cools it to 39 degrees.

This pasteurization or sterilization process removes contamination and eliminates common bacteria that are harmful to humans such as salmonella, listeria and E. Coli. But it doesn’t remove all (non-pathogenic) bacteria.

Ultra Pasteurized Milk

Ultra-High Temperature (UHT) pasteurized milk is heated to about 280 degrees Fahrenheit for just 2 seconds and is then quickly chilled back to 39 degrees.

This process removes the remaining non-pathogenic bacteria, which gives the milk a later sell-by date and lasts longer in the fridge before you open the carton. Once you open the container, the life of the milk is the same as pasteurized milk.

Ultra Filtered Milk

Ultra-filtered milk goes through a very fine filtration system that concentrates the milk. Lactose is filtered out, leaving behind lactose-free milk that has more concentrated protein and lower sugar.

Tips and Substitutions


Fairlife vs other brands

This cold start yogurt recipe requires ultra pasteurized milk. Although not essential, if the milk is also ultra filtered, you’ll get thicker yogurt. Fairlife milk is the brand that I use because it’s ultra pasteurized AND ultra filtered, which gives it a high protein content. The higher protein makes the Fairlife yogurt thicker and creamier.

There are three kinds of Fairlife milk: the red bottle is whole milk, the blue bottle is 2% milk and the light blue bottle is 1% milk. All three have high protein levels but due to the fat content, whole milk will give you the thickest yogurt, and 1% milk will be slightly thinner.

You can use other brands of ultra pasteurized ultra filtered milk. Try and find one with a protein content like Fairlife (13 grams per cup).

If the brand you’re using (e.g. Horizon Organic, Organic Valley, Costco Kirkland, etc.) has a lower protein content, there are a few things you can do to ensure success:

  1. Incubate the yogurt for a longer period of time (about 12 hours).
  2. Add in about ¼ to ⅓ cup of nonfat dried milk (powdered milk).
  3. Strain the yogurt through a cheesecloth or cheescloth bags after the incubation period.

Yogurt Starter

Yogurt starter is the catalyst that converts the milk to yogurt. I like to use plain yogurt as my starter. Vanilla yogurt also works fine.

Some flavored yogurts can have fewer active live cultures and may contain ingredients that can interfere with the fermentation, so I avoid using them as a starter. Besides, using flavored yogurt as your starter won’t yield a flavored yogurt.

The different brands of yogurt produce different levels of tartness when used as a starter. My advice is to use the brand of yogurt that you like the taste of.

Some are acidic, while others are sweet or mild. I find Fage, Yoplait Oui and Noosa to be on the milder side. Siggi’s and Chobani are a bit more tart.

Once opened, the yogurt starter should be used up within 7 days. Beyond that, the effectiveness of the culture diminishes. The fresher the yogurt, the better the results.

Once you’ve made your first batch successfully, you can set aside a few tablespoons of that yogurt as your starter for the next batch. You can successfully keep this going for a few generations. Some people keep it going for years and others have to restart after 3, 5 or 10 generations.

Yogurt can be frozen by the tablespoon in an ice cube tray. So you can make many copies of that first generation and get quite a few batches of yogurt from it. Just be sure to fully thaw the yogurt before using it as a starter.

You can also purchase powdered yogurt cultures, which are just freeze-dried yogurt. These yogurt starters can be stored in the freezer. Although I’ve not used them to make no-boil or cold start yogurt, I know people are successful with them.

Here are some more tips on how to care for your yogurt culture.

Covering the Inner Pot

You can cover the inner pot with any of the following:

  • The Instant Pot lid *
  • Instant Pot silicone cover
  • Instant Pot tempered glass lid

* If you’re concerned about the smell of the sealing ring transferring to the yogurt, you can remove the sealing ring. The Instant Pot doesn’t reach pressure, so the sealing ring isn’t necessary. The steam release can be on Sealing or Venting. It doesn’t matter.

Some people like to put a clean paper towel below the lid to capture condensation:

Making Greek Yogurt

To make a thick Greek-style yogurt, refrigerate the yogurt until set. Transfer the yogurt to a fine-mesh strainer, cheesecloth bag, or colander lined with cheesecloth, and let the whey drain into a bowl for several hours. The whey is full of probiotics and healthy nutrients. Here are some ideas on what to do with the whey.

Additions

Any of the following ingredients can be added to the milk before the incubation process. However, for your first time, try and keep it simple.

  • Nonfat dried milk
    Add ¼ to ⅓ cup of nonfat dried milk to the liquid milk to get thicker yogurt. This is especially useful if the protein content of your milk is lower than Fairlife’s.
  • Heavy cream
    Add ½ cup of heavy whipping cream to the milk to get a thicker consistency of yogurt.
  • Sweetened condensed milk (SCM)
    Sweetened condensed milk added to the Fairlife milk makes for such a delicious treat! I use Carnation or Eagle brand SCM. Thoroughly stir the SCM into the milk to get thick and creamy sweet yogurt.
  • Vanilla extract
    I add one teaspoon of vanilla extract to the milk for a dash of extra flavor.
  • Spices
    For added flavor, stir in ½ teaspoon of your favorite spices such as cinnamon or cardamom to the milk. The spices may rise to the top upon fermentation, but they can be stirred back in.
  • Dairy creamer
    Add about 1 cup of milk-based creamers such as Chobani or Natural Bliss coffee creamer to the milk for additional flavor. Don’t use a non-dairy creamer.

FAQS


Why is my Yogurt Not Setting?

Needs More Time
Proper fermentation requires time. Yogurt takes anywhere from 6 to 12 hours to set. You may just need to let it ferment (incubate) for a bit longer. If you’re using a brand other than Fairlife or if you’re using organic milk, you might need to add a few hours to the fermentation time e.g. 12 hours of fermentation.

Starter Too Old
If you’re using an opened container of commercial yogurt, it could be too old. The longer an open container of yogurt sits in the fridge, the weaker the live cultures.

Starter Not Potent
If you’re using yogurt set aside from a previous batch (recultured yogurt) it can start to be less effective after a few generations. At that point, you should buy a fresh container of starter yogurt.

Using the Less Setting
The Instant Pot Yogurt smart program has multiple settings. Some models have three settings: Less, Normal and More. The Less setting is for Jiu Niang (fermented glutinous rice) and won’t work for yogurt. The More setting is for boiling the milk (used with regular milk). For this Instant Pot yogurt with Fairlife, you need to use the Normal setting which is for fermentation. If you’ve accidentally used the Less mode, switch it to Normal and start the fermentation again.

Quantity of Starter Too Little
You may have added too little of the yogurt starter. You’ll probably end up with a good result if you let it ferment for a bit longer.

Quantity of Starter Too Much
You may have added too much starter. A heaping tablespoon of yogurt per quart (4 cups) of milk is enough. Although you might think that more is better, this isn’t quite true. In fact, less is more. If you add too much starter, you’ll crowd out the bacteria and it will run out of food to ferment. You can end up with runny yogurt.

Wrong type of milk
You may have used regular pasteurized milk and not ultra pasteurized milk. If you want to use pasteurized milk, you need to use the method used in my Instant Pot yogurt recipe where you boil the milk first.

Inner Pot isn’t Clean
The Instant Pot inner pot could be contaminated. Always make sure that you start the fermentation in a clean and sterilized inner pot. Also make sure that any utensils you use are clean and dry. And watch out for soap residue.

Instant Pot is Running too Warm or too Cold
Measure the temperature of the milk/yogurt in the Instant Pot and make sure it’s at approximately 110 degrees Fahrenheit. If it’s much higher or lower, you may be using the Less or More setting or there may be an issue with the Instant Pot.

Why is my Yogurt Thinner than Store-bought Yogurt?

Artificial Thickeners
Purchased yogurt can have artificial thickeners, so it may not be a fair comparison. Next time you make cold start yogurt, add nonfat dried milk to the milk.

Less Protein in the Milk
Fairlife milk produces fairly thick yogurt due to the protein content. The higher the protein and fat content of the milk, the thicker the yogurt. If you’re using a brand other than Fairlife, the protein content might be too low. You can strain the yogurt through a cheesecloth to get thicker yogurt. Or add nonfat dried milk to the milk next time.

Less Fat in the Milk
If you’re using lowfat or skim milk, the fat content may be causing the issue. Try adding nonfat dried milk to thicken the yogurt in your next batch.

Needs to Chill
Yogurt also thickens up quite a bit once it’s chilled. So if the yogurt is set but still jiggly, putting it in the refrigerator might make it thicker.

Whey Has Formed
Whey is the thin liquid the rises to the top of yogurt. Whey formation is normal. Whey has probiotics and nutritional benefits. Lower fat milk can cause more whey and some yogurt cultures form more whey. You can either stir it in, drain it off, or strain it.

Why is my Yogurt too Sour?

Generally, the type of starter you use contributes to the flavor of the yogurt. If you’re using a tart starter, the resulting yogurt will also be tart. Try and buy a starter yogurt that you like the taste of.

The longer you ferment the yogurt, the tarter it gets. Next time, try and remove the yogurt an hour or two earlier.

How Can I Tell When the Yogurt is Ready?

After about 9 hours of fermentation, use a clean spoon to remove some yogurt (without disturbing the yogurt) to see if it’s tart enough and thick enough.

If it’s not quite ready, program the Instant Pot to ferment for a few more hours. The longer the yogurt incubates (ferments), the tarter it gets. If it’s been fermenting for less than 12 hours, it might thicken up with more time.

If the yogurt is too tart or sour, you can reduce the fermentation time in your next batch by an hour or two.

Why is my Yogurt Grainy?

Using commercial yogurt that has additives can cause the resulting yogurt to be grainy. Try and stick to plain yogurt without any flavorings.

I’ve found that add-ins such as vanilla or spices can sometimes make the yogurt grainy. Fully incorporating these ingredients into the milk with a whisk can help reduce graininess.

How Long Can Yogurt be Stored?

Yogurt can be stored in the refrigerator for 2 to 3 weeks. You can store it in the freezer for up to 3 months.

What Can I Do if I Don’t Have the Yogurt Button?

If your Instant Pot has a Sous Vide button, use it to set the temperature to 110 degrees Fahrenheit.

How to Make Yogurt in the Instant Pot (Step by Step Instructions)

  1. Add milk to clean the inner pot.
  2. Stir in the yogurt starter and close the lid.
  3. Program the Instant Pot Yogurt function.
  4. Check to see if the yogurt is set.

How to Program the Instant Pot Yogurt Function For Every Model

If your Instant Pot has no Yogurt button, you can still make yogurt if it has the Sous Vide button. If you don’t see your model below, it’s because it has neither the Yogurt nor the Sous Vide smart program e.g. the Instant Pot Lux does not have a Yogurt or Sous Vide smart program.

  2. Press the knob to select Yogurt.
  3. The time will have a box around it that’s blinking. Press the knob to choose it. Now, the time will be blinking.
  4. Turn the knob to change the time to 09:00 (9 hours) and press the knob to confirm it.
  5. Turn the knob to go to Temp and press the knob to choose it.
  6. Turn the knob to toggle between Low, Medium, High and Custom. When Custom is blinking, press the knob to select it.
  7. The temperature will be blinking.
  8. Turn the knob to select 110 degrees Fahrenheit.
  9. Press Start.
  10. Once the Instant Pot has reached the fermentation temperature (approximately 110 degrees Fahrenheit), the display will change to 09:00 and begin counting down.
  11. After 9 hours the display will go to 00:00 and beep.

Check to see if Yogurt is Set

  • Remove the lid.
  • Taking care not to disturb the yogurt too much, use a clean spoon to remove a teaspoon of yogurt. Check to make sure the yogurt is set: taste to make sure it is thick enough and tart enough.
  • If it’s still too thin or not tart enough, cover again and set the Yogurt program for another 2 hours.
  • If it is ready, take the inner pot out of the base unit, cover and refrigerate immediately.
  • Be careful not to disturb the yogurt too much. The yogurt will thicken some more in the refrigerator.

Equipment

  • Whisk

Ingredients

  • 1 tablespoon plain yogurt preferably full fat
  • 4 cups ultra pasteurized, ultra filtered milk preferably Fairlife brand

Optional Ingredients

  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Instructions

  • Make sure the inner pot is completely clean.
  • Pour milk into inner pot.
  • Add the yogurt and optional ingredients to the milk and use a clean whisk to incorporate the ingredients into the milk.
  • Close the Instant Pot lid and set to Yogurt mode for 9 hours. See blog post for instructions on each model.
  • Press Cancel and open the Instant Pot. If the yogurt appears to be thickened, use a clean teaspoon to take out a small amount of yogurt and see if it's thick enough and tart enough for you. If it isn't, put the lid back on and let it run through the Yogurt program for another 2 hours.
  • When the yogurt is set, transfer the inner pot to the refrigerator for a minimum of 4 hours. Don't disturb it until it's fully chilled.

What is the Instant Pot Delay Start / Timer?

Every Instant Pot has a button or function called Delay Start. On some (older) models, the same function is called the Timer. The Instant Pot Timer or Delay Start allows you to program the Instant Pot to begin cooking from 10 minutes to 24 hours from the present time.

The Delay Start option does NOT apply to Keep Warm, Saute, Sous Vide, Yogurt, or Air Fryer smart programs.


Why Would you Use Delay Start?

Here are some of the types of Instant Pot delay start recipes:

  • Preparing steel-cut oats in the Instant Pot the night before and programming Delay Start so the Instant Pot turns on in the morning.
  • Preparing ingredients in the Instant Pot in the morning, and setting the Delay Start program to begin cooking before you get home from work.
  • Soaking rice and setting Delay Start to begin cooking the rice 15 minutes later.
  • Soaking beans and setting Delay Start to begin cooking the beans 6 to 8 hours later.
  • [Note: If you like to drain the water that you soaked the beans in, this option may not apply to you.]

Is Delay Start Safe to Use?

Regarding food safety, for most foods, up to 2 hours delay start should be pretty safe if your house isn’t overly warm. According to the USDA’s food safety guidelines:

Bacteria grow most rapidly in the range of temperatures between 40° and 140°F, doubling in number in as little as 20 minutes. This range of temperatures is often called the ‘Danger Zone’.

The USDA advises consumers to never leave food out of refrigeration over 2 hours. If the temperature is above 90°F, food should not be left out for more than 1 hour. This applies to any foods that are perishable and need to be refrigerated. So not just meat, poultry, and eggs but even produce.

That being said, I know of people who do cook perishable foods using delay start but use ice instead of water in the inner pot. I haven’t tried it and cannot attest to the safety of this method!

So what can you cook in the Instant Pot safely with delay start set to more than 2 hours? Any foods that are non-perishable and don’t need to be refrigerated can be safely cooked this way.

  1. Press Manual or Pressure Cook (or another button e.g. Soup/Broth).
  2. Press + or – to set the desired pressure cooking time.

Instant Pot Max Delay Start

Here are the directions for Instant Pot Max delay start:

Unlike in other models, the Delay Start time on the Max is the actual time you want cooking to begin e.g. to begin cooking at 05:15 PM, set the hours to 5 and the minutes to 15.

  1. Touch Pressure Cook.
  2. Touch the Hour and turn the knob to set the cook time hours.
  3. Touch the Minute and turn the knob to set the cook time minutes.
  4. If desired, change the default settings of Pressure, Keep Warm and Venting by touching them repeatedly to toggle the different settings.
  5. Touch Delay.
  6. Touch the Delay Hour and turn the knob to set the time (hour) you want the cooking to begin at. To adjust AM/PM, turn the knob until the display rolls past 12:00.
  7. Touch the Delay Minute and turn the knob to set the time (minutes) you want the cooking to begin at.
  8. Touch Start.
  9. A second hand will tick around the clock icon next to the delay start time.
  10. Once the delay start time has been reached, the display will change to On and pressure cooking will begin.

The Delay setting on the Instant Pot Max is not recommended to be used in conjunction with the auto-venting feature when cooking thick or foamy foods.


Instant Pot Ultra Delay Start

Here are the directions for Instant Pot Ultra delay start:

  1. Turn the knob to Pressure Cook or your desired smart program (e.g. Soup/Broth or Bean/Chili)
  2. Press the knob to select the program/function.
  3. The cooking time will have a box around it that’s blinking. Press the knob to choose it. Now, the time will be blinking.
  4. Turn the knob to change the cook time and press the knob to confirm.
  5. Turn the knob to go to the Delay option and press the knob to choose it.
  6. Turn the knob to toggle between On and Off. When On is blinking, press the knob to confirm.
  7. The time will be blinking. Turn the knob to change the delay start time e.g. 4:00 to start pressure cooking 4 hours from now. Press the knob to confirm.
  8. Press Start.
  9. The display will begin to count down e.g. from 4:00 to 0:00.
  10. Once the time is up, the display with change to On and pressure cooking will begin.

Is the Duo Crisp the same as an air fryer? Well, it’s more than an air fryer because the Instant Pot Duo Crisp is a pressure cooker and air fryer all-in-one. It has a simple display panel, a pressure cooker lid that auto-seals, and a separate lid that allows it to be converted to an air fryer.

If you’ve just purchased the Instant Pot Pro Crisp, follow my Instant Pot Pro Crisp Beginner’s Manual and User Guide. The Pro Crisp has similar features and display panel to the Instant Pot Pro, one of my favorites, and the air fryer capabilities are very similar to this model, the Duo Crisp.

I’ve been using the Duo Crisp a lot and I’ve made Instant Pot air fryer roasted potatoes, brussel sprouts, chicken wings, frozen fries, and even a pound cake. They’ve all turned out excellent. Not a single miss!

What is an Instant Pot?

The Instant Pot has become so popular in recent years that Instant Pot is being used by some as a generic name for pressure cookers of any brand.

In reality, Instant Pot is the brand name of a multicooker that serves as a pressure cooker, slow cooker, rice cooker, yogurt maker, sauté/searing pan, steamer, and warming pot all in one convenient appliance.

Some people use the name Instapot, but the correct name is Instant Pot.

The Instant Pot Company (Instant Brands) started out with one product – the Instant Pot multicooker – and now makes a wide range of kitchen appliances including air fryers, blenders, and toaster ovens.

Although the Instant Pot multicooker has many different functions (aka smart programs), the most commonly used is the Pressure Cook function. Pressure cooking allows you to cook foods at a fraction of the time it would take on the stovetop.

The Instant Pot Duo Crisp model differs from other models in that it comes with an additional lid that allows you to use the Instant Pot as an air fryer.

Safety Precautions

Most old-style pressure cooker disasters in the past could be attributed to user error. Instant Pot pressure multicookers are carefully designed to eliminate and avoid most of the potential problems. 

Numerous safety features help reduce common errors. Safety features include pressure sensor technology, lid close detection, lid lock technology, overheat protection and automatic temperature and pressure controls.

Although there are many built-in safety features as explained above, as a user you need to follow common-sense precautions:

  1. Don’t touch the hot surfaces, particularly the stainless steel parts. Use the handles to move the Instant Pot or the inner pot.
  2. Don’t place the Instant Pot on or close to an electric or gas burner.
  3. Don’t move the Instant Pot when it’s under pressure.
  4. Don’t fill over ⅔ full.
  5. When cooking foods that expand e.g. rice, beans, pasta don’t fill over ½ full.
  6. Ensure anti-block shield, float valve, and steam release pipe are clean and not clogged.
  7. Don’t open the lid until the float valve is down i.e. the Instant Pot is depressurized.
  8. Keep hands and face away from the steam release mechanism.
  9. Don’t obstruct the steam release valve when pressure is being released.
  10. When quick-releasing frothy foods such as applesauce, oatmeal, pasta, etc. take extra care. It’s best to release pressure in short bursts for these types of foods.
  11. Don’t use another Instant Pot model’s lid on the Duo Crisp Instant Pot and vice versa.
  12. Don’t cover vents when the air fryer is in use.
  13. Only use the original stainless steel inner pot (do not use a ceramic–coated inner pot) when using the air fryer lid.
  14. Don’t overfill the air fryer basket and don’t cook oversized foods.
  15. Only place the air fryer lid on the enclosed protective pad, when hot. Do not place directly on the countertop.
  16. When the air fryer lid is in use, keep hands and face at a safe distance from the air vents due to hot air.

Parts

Instant Pot Duo Crisp Parts - base unit, inner pot, pressure cook lid, air fryer lid

Here are all the parts of the Instant Pot Duo Crisp + Air Fryer. It comes with two lids. The first lid is the pressure cooker lid and the second lid is the air fryer lid:

  • Base Unit/Outer Pot – stainless steel exterior that houses the heating element, control panel, and attached power cord.
  • Inner Pot – removable stainless steel pot. The inner pot is stove-friendly, so you can use it on your stovetop as you would a regular pot. It can be washed in the dishwasher or by hand.
  • Pressure Cook Lid – closes the Instant Pot and seals it under pressure. The lid can be washed in the dishwasher or by hand.
  • Air Fryer Lid – closes the Instant Pot and converts it into an air fryer. The lid should not be washed. Remove all food debris and grease splatter once cool, by cleaning the heating element cover and surrounding area with a soft, damp cloth or sponge.

How Does Pressure Cooking Work?

The Instant Pot Duo Crisp pressure cooker creates a closed environment where steam builds up in a tightly sealed pot. This, in turn, causes the internal temperature to rise and pressure to increase.

Under high pressure, the fiber in the food is tenderized and flavors develop in a very short time. Nutrient-rich steam condenses in the pot instead of evaporating and nutritional value is retained because of the speed of cooking.

The Instant Pot Duo Crisp pressure cooker comes with the following accessories for pressure cooking:

  • Sealing Ring – allows the Instant Pot to build pressure by creating a tight seal when the contents are heated to a high temperature. It can be washed in the top rack of the dishwasher or by hand.
  • Trivet / Steam Rack – useful for elevating food above the liquid and for Pot in Pot cooking. The trivet can be washed in the dishwasher or by hand.
  • Condensation Collector – catches drips from condensation on the lid; attaches onto the back of the base unit. The condensation collector can be washed in the top rack of the dishwasher or by hand.
  • Note: some models come with spoons and a measuring cup. The Duo Crisp currently does not ship with these accessories.

  • Lid Fins – placed in the lid fin slot of the base unit to prop the lid open
  • Steam Release Button  (also referred to as Pressure Release Button or Steam Release Reset Button) – allows a manual release of pressure from the Instant Pot Duo Crisp. The Steam Release Button automatically pops up when the Instant Pot Duo Crisp lid is opened or closed.
  • Float Valve – seals in the steam, allowing the Instant Pot to be pressurized
  • The Steam Release Valve – a safety mechanism that allows steam to escape and maintains the correct pressure level.  It sits loosely on the lid and can be removed to be cleaned.
  • Lid Handle – used to put on and take off the lid.

The steam release consists of:

  • Steam release valve – regulates the internal temperature. It is supposed to be wobbly but must be pushed in all the way.
  • Steam release pipe – steam travels from the inner pot through the pipe during steam release.

The inside of the Instant Pot lid consists of the following parts:

  • Silicone Cap for Float Valve – covers the float valve and keeps it in place
  • Lid Locking Pin – safety mechanism that prevents the lid from opening under pressure
  • Anti-Block Shield – prevents food from coming out of the inner pot through the steam release pipe
  • Sealing Ring Rack – holds the sealing ring in place
  • Sealing Ring – silicone sealing ring allows the Instant Pot to seal

  • Pull gently on the silicone ring until it detaches from the sealing ring rack.
  • Continue to pull the silicone sealing ring out until it is completely separated.

  • Working your way all around, push the sealing ring until it’s firmly seated in the sealing ring rack.
  • Make sure no part of the sealing ring is sticking out, or you may have sealing issues and get the Burn Message.
  • The first few times, you may find it difficult to remove the sealing ring but after a few uses, it should stretch out a bit.

Float Valve

You should clean the float valve periodically, especially after cooking frothy or starchy foods.

  • While holding the float valve in place on the outside of the lid, remove the float valve’s silicone cap.
  • Allow the float valve to fall out from the bottom.
  • Be careful not to misplace the silicone cap.

  • Thread the float valve through the float valve hole.
  • While holding it in place on the exterior of the lid, replace the silicone cover by pushing it onto the float valve on the interior of the lid.

Anti-Block Shield

You need to clean the anti-block shield periodically, especially after you’ve cooked frothy or starchy foods.

  • The anti-block shield can be hard to remove with your bare hands.
  • Use a silicone trivet or a dish towel to push the anti-block shield in an upwards motion.
  • Try it from the front or from behind (as shown above in the first image)
  • To replace the anti-block shield, push it in until it clicks into place.

Here are the Instant Pot Duo Crisp directions to assemble the base unit, inner pot, condensation collector, and power cord:

  • Make sure the base unit is empty and clean.
  • Place the stainless steel inner pot into the base unit.

Condensation Collector

The condensation collector catches any moisture that builds up on the rim. This usually comes from moisture dripping from inside the lid into the rim of the Instant Pot base, when the lid is propped open.

In my experience, the condensation collector rarely fills up but I have found that when I cook pasta, in particular, liquid tends to collect and it can get messy! Get into the habit of checking for liquid in the condensation collector after every use.

To attach the condensation collector:

  • Slide the condensation collector onto the back of the Instant Pot.
  • It will sit snugly against the base unit.
  • To clean it, slide it out, empty it out, rinse and slide back in place. It can also be washed in the top rack of the dishwasher.

  • Place the lid onto the Instant Pot base unit with the arrow mark on the lid lined up with the open lock icon that is above the right corner of the control panel.
  • You’ll hear a chime (if the volume is turned on).
  • Turn the lid clockwise until the arrow mark on the lid is lined up with the closed lock icon and you’ll hear another chime.
  • The lid will be closed.

How to Open the Pressure Cooker Lid

  • The lid will not open until all pressure has been released.
  • Once the float valve is down, turn the lid counter-clockwise until you hear a chime.
  • The arrow on the lid will be lined up with the open lock icon on the base unit.
  • Lift the lid to remove it.
  • If you feel a slight resistance, wiggle the lid back and forth and the suction should release.

How to Prop Open the Pressure Cooker Lid

Propping open the lid keeps it out of the way and allows you to use the Instant Pot hands-free.

  • Locate the two lid fins on the lid.
  • Locate the lid fin slots on the base unit.
  • Insert either lid fin into either slot to prop the lid open.

How to Release Pressure

  • When the Instant Pot Duo Crisp is under pressure, the float valve goes up and the Instant Pot is sealed.  It cannot be opened.  Don’t try to force it open!
  • When the Instant Pot Duo Crisp isn’t under pressure, the float valve goes back down and is level with the lid.

There are a few ways you can release pressure once the Instant Pot Duo Crisp has finished pressure cooking.  The recipe you’re following will give you directions on what method to use.

In this article, I discuss the two most common pressure release methods:

  • Quick Release (QR)
  • Natural Pressure Release or Natural Release (NPR or NR).

How to Quick Release (QR) Instant Pot Duo Crisp

  • To do a Quick Release of pressure (QR), press down on the Steam Release Button until it locks into place, and steam begins to come out of the Steam Release Valve.
  • Be sure your hand is not above the Steam Release Valve while the pressure is being released.

  • The Float Valve will go from the up position to the down position once the Instant Pot Duo Crisp has de-pressurized and all the steam has been released.
  • It is now safe to open the Instant Pot Duo Crisp.

How to Natural Release (NR) / Natural Pressure Release (NPR) Instant Pot Duo Crisp

  • To do an Instant Pot Natural Release of Pressure (NPR), wait for the Float Valve to go down on its own.
  • This can take anywhere from 5 minutes to 30 minutes, depending on how much liquid is in the Instant Pot.  The more liquid there is, the longer it takes for the Instant Pot to release pressure on its own.
  • If you’re in a hurry, you can wait for 15 minutes for the Instant Pot natural release, and then release the remaining pressure using the quick-release method.

Commonly Used Instant Pot Duo Crisp Pressure Cook Buttons

The Instant Pot Duo Crisp has many buttons that may appear confusing and complicated, but they aren’t. Some of the buttons are used with the pressure cooker lid, and some are used with the air fryer lid and some are used with both.

In this section, I’ll go over directions for the most commonly used buttons and functions (smart programs) used with the pressure cooker lid. This will allow you to get going and be able to use most of this Instant Pot’s pressure cooking capabilities.

Pressure Cook

Pressure Cook is one of the most useful features of the Instant Pot. It’s only used with the presssure cooker lid.

Pro Tips


You might see some recipes tell you to press Manual. Manual and Pressure Cook are the same thing. Manual was replaced with Pressure Cook in newer versions of the Instant Pot.

To change the pressure level on this model – the Instant Pot Duo Crisp – press the Pressure Cook button multiple times to toggle between Lo (low pressure) and Hi (high pressure). On some other models, there’s a button Pressure Level or Pressure that allows you to change the pressure from Low to High.

  • Press the Pressure Cook button.
  • Press the Time + or – buttons to set the pressure cooking time.
  • Once the pressure cooking time has been set (e.g. 00:05 for 5 minutes), press the Start button.
  • Wait a couple of seconds and the display will change to On.

  • The float valve will go from the Down position to the Up position.
  • This can take anywhere from 5 to 30 minutes, depending on the amount of food you’re cooking and the temperature of the ingredients.

Saute

The Saute function allows you to saute food in the Instant Pot before pressure cooking, and to reduce the liquid after pressure cooking. I love this function because I don’t need to get out another pan and that helps keep cleanup to a minimum.

  • Select the Saute button and press Start.
  • The Instant Pot chimes and the display says On.
  • Once the desired saute temperature has been reached, the display says Hot.
  • Add your food to the inner pot and saute.

To change the Saute temperature:

  • Press the Saute button repeatedly to toggle between Lo (low temperature) and Hi (high temperature).

Safety Tip


Don’t use the Instant Pot pressure cooking lid while sauteing or you will get a Lid error. A glass lid with a venting hole or a splatter screen (both purchased separately) may be used. As a safety precaution, the cooker automatically enters Standby mode (display says OFF) after 30 minutes if you have not pressed Cancel.


Cancel

  • Press the Cancel button to end any selected function. The Instant Pot display will say OFF.
  • This button is used with both the pressure cooker lid and the air fryer lid.

Start

  • This button is used with all the smart programs, whether pressure cooking or not.

Note: Some Instant Pot models don’t have a Start button. Instead, the selected smart program automatically begins a few seconds after it’s selected.


Keep Warm

The Keep Warm function is useful when you want your food to stay warm after being pressure cooked. Turning on the Keep Warm function allows you keep track of the amount of time since pressure cooking completed. This is useful when you’re doing a natural release.

  • Press the Keep Warm button to turn the Keep Warm function on and off.
  • After pressing the Keep Warm button, press the Time + and – buttons to change the time you want the Instant Pot to be in Keep Warm mode.
  • After pressure cooking is complete, the Keep Warm function starts and the time counts UP by minutes. The display panel shows the elapsed time since the Keep Warm mode began (e.g. 00:02 for 2 minutes or 00:15 for 15 minutes.) If the Cancel button is not pressed, the Instant Pot will turn OFF after 10 hours.
  • The Keep Warm function can be used with or without the lid closed. You can also use an optional glass lid for this function. When the Keep Warm function finishes, the cooker beeps and goes into standby mode.
  • This button is used only with the pressure cooker lid.

Other Functions

Steam works very similarly to Pressure Cook. You can steam foods with or without pressure. If you want to steam without pressure, either use a glass lid or set the steam release button to Venting i.e. push down on the stream release knob until it’s locked into place.

Slow Cook allows you to use a glass lid or you can use the pressure cooker lid set to Venting. For this model, the Slow Cook button allows you to set the temperature to Low or High.

What is the Water Test?

A water test is done by pressure cooking water for a few minutes. The amount of time varies based on how much water you use.

Why You Should do the Water Test

The initial test run or water test serves two purposes: it familiarizes you with using your new Instant Pot Duo Crisp and it allows you to establish that your Instant Pot is working properly. If you have a defective unit, the water test will identify that and you can get a replacement unit.

You should do a water test before the first use but you can also do it when you’re having problems with the Instant Pot pressurizing. Doing the water test will pinpoint whether there’s something about the recipe that’s causing your sealing issues.

How to do the Initial Test Run / Water Test

  • Make sure the sealing ring is properly seated.
  • Place the inner pot into the base unit.
  • Plug the power cord into an outlet.

  • Pour 3 cups of water into the inner pot.
  • Close the lid.
  • Make sure the steam release button is up. If it isn’t, turn it counter-clockwise to snap it back up.

  • Press the Pressure Cook button.
  • Press the + or – buttons until the time goes to 00:05 (5 minutes).
  • Press the Start button.

  • After a couple of seconds, the display will change to On.
  • Soon, you’ll hear and see small amounts of steam coming from the top of the lid. This is normal and safe! Just keep your hands and face away from the steam. You might also notice a funny, plastic smell.  Don’t worry – it should go away and it shouldn’t happen again after the first use.
  • Once pressure has built up, the float valve will come up.
  • After the float valve comes up, the display will change from On to 00:05. This can take a few minutes.
  • The display will count down from 00:05 to 00:00.

  • When pressure cooking is complete, you’ll hear a series of beeps and the display will show L0:00, which means it’s in Keep Warm mode (if the Keep Warm function is turned on.)
  • You can either do a quick release or a natural release. To do a natural release, wait for the float valve to fall on its own. This can take 10 to 30 minutes. [Learn more about all the pressure release methods.]
  • In this case, you’ll do a quick release.
  • Press the Cancel button. The display will say OFF.
  • Press the steam release button until it locks into place. Steam will gush out of the steam release cover. Keep your hands and face away from the steam.

  • This can take a few minutes.
  • Open the lid and prop the lid open.

What is an Air Fryer?

Although it’s called an air fryer, an air fryer does not fry. It does precisely the opposite. It crisps food with little to no oil. And that is what has made air fryers so popular in recent years.

The air fryer was introduced by Philips in 2010 under the trademark AirFryer (one word). Air fryer, on the other hand, has become a generic term for a class of appliances.

How does an air fryer work? The air fryer has a powerful fan that blows hot air all around the food similar to how a convection oven works. Due to the small enclosed space and concentrated heat, the food heats up and cooks very fast.

The advantages of air frying are:

  • Very little oil needs to be used
  • Food comes out crisp
  • Food cooks fast
  • Because of the size, air fryers give off less heat

Introduction to the Instant Pot Air Fryer Lid

One of the downsides to using an Instant Pot pressure cooker used to be that you couldn’t get foods to crisp or brown. Well, no more!

Instant Pot has joined the party by introducing an air fryer lid that can be used in conjunction with the Instant Pot, and it’s a game-changer. Now you can pressure cook food in the Instant Pot and use the air fryer lid to crisp up the top.

Or you can use the air fryer lid without having pressure cooked the food, similar to how you would use a traditional air fryer.

Food is placed in a mesh basket, which in turn, is inserted into the inner pot. The air fryer lid is placed on top and it blows superheated air to cook and crisp food. You can cook food from fresh or frozen.

You can also use the air fryer lid to broil food directly in the inner pot i.e. without using a basket, which is akin to broiling the food in the oven. More on that later.


Instant Pot Air Fryer Lid vs Traditional Air Fryer

The Instant Pot air fryer lid differs from traditional air fryers in a few ways:

• Since a standalone air fryer sits on your counter, you only need to remove the basket and that makes it easier to take the food out.
• Older kids could use some models with supervision.
• The highest temperature you can program is 400 degrees Fahrenheit, which serves most purposes. However, if you have a recipe that calls for a higher temperature, you’ll need to adjust the recipe.• Many air fryers can go up to a maximum temperature of 450 to 480 degrees Fahrenheit.

The Instant Pot Duo Crisp air fryer lid comes with the following accessories:

  • Air Fryer Lid – allows the Instant Pot to be used as an air fryer.
  • Protective Cooling Pad – used to protect the countertop from the hot heating element of the air fryer lid. Always place the air fryer lid on this base.
  • Dehydrating/Broil Tray – used when you’re air frying two levels of food. The tray is placed in the air fryer basket and it sits on a ridge, about halfway up.
  • Air Fryer Basket – the basket has vents on the bottom and a ridge on which the dehydrating/broil tray can be placed.
  • Air Fryer Basket Base – a raised base that clips onto the air fryer basket.

Ways to Use the Air Fryer Lid

There are three ways in which you can cook using the air fryer lid on your Instant Pot.

  1. Directly in the inner pot
  2. Using the pot-in-pot method (where food is in an oven-safe dish)
  3. Air fryer basket

Directly in the Inner Pot

If you’re cooking something in the Instant Pot directly and want to crisp up the top, you can use the air fryer lid to do that.

e.g. I make Instant Pot macaroni and cheese and once pressure cooking is done, I add a breadcrumb topping and use the air fryer Broil button to brown the top. If I cook a lasagna using the pot-in-pot method, I use the air fryer lid to make it golden-brown and bubbly.

Pot in Pot

If you would like to bake something in a separate oven-proof container, you can place it on a trivet and air fry it or bake it.

e.g. I bake cakes using the air fryer Bake button. They come out really great.

Air Fryer Basket

If you wish to use a traditional air fryer recipe to make crispy foods, you can use the air fryer basket to air fry the foods.

e.g. I make air fryer French fries, chicken wings, and roasted vegetables using the air fryer basket.

How to Assemble the Basket

  • Place the air fryer basket upside down on a stable surface.
  • Press the air fryer basket base firmly onto the basket. The teeth on the base should click into the groove on the outside of the basket.

How to Put in the Broil Tray

  • Turn the basket right side up.
  • Hold the broil tray by the two large holes in the middle and lower the tray into the basket. The broil tray can be used to air fry food on multiple levels.

NOTE: If you put food into the lower level and want to turn it halfway through cooking, removing the broil tray is not easy when there’s food in it.

One hack is to use a pair of bamboo tongs that are used to remove toast from the toaster. Using the tongs allows me to easily remove the tray from the basket.

Some people use a couple of wooden chopsticks to poke into the smaller holes. The size of the holes is perfect for chopsticks to sort of wedge into.


How to Store the Air Fryer Lid

  • Place the protective pad on a stable uncrowded surface, flat side up.
  • Remove the air fryer lid by lifting it up. Avoid direct contact with the heating element.
  • Place the lid on the protective pad till it cools down completely.

How to Store the Lid Once Cool

  • Once the lid has cooled down, flip the protective pad over so the grooved side is up.
  • Line up the back of the air fryer lid with the OPEN on the protective pad and turn the air fryer lid clockwise to the LOCK position.

Commonly Used Instant Pot Air Fryer Buttons

The air fryer smart programs are circled with a fan icon. They are Air Fry, Roast, Bake, Broil and Dehydrate.

One thing that’s important to understand is that the smart programs/buttons are all just presets as you have on a microwave. They are preset with optimal times and temperatures. You can use the Air Fry button to accomplish the same thing as the Bake or Broil function.

e.g. the Bake smart program is preset to 365 degrees Fahrenheit and 30 minutes. You can change these settings by using the + and – buttons. Once you change the presets, the Instant Pot will remember the new setting the next time you use that preset.

I will go over the most commonly used air fryer buttons that will allow you to get going and be able to use most of this Instant Pot’s air frying capabilities.

Air Fry

Air Fry smart program defaults to 18 minutes at 400 degrees Fahrenheit but you can change the settings.

Use Air Fry to cook frozen French fries, tater tots, vegetables, mozzarella sticks, etc.. I’ll walk you through with step-by-step instructions on using the Air Fry smart program. All the other smart programs work in a similar way. In this example, we’re cooking French fries.

  • Before getting started, make sure the inner pot is in the base unit.
  • Liberally coat the broil tray with vegetable oil, to prevent food from sticking. You can also use a refillable oil mister.
  • Place food in the inner pot (either directly, in the air fryer basket, or in an oven-safe dish on a trivet).
  • Place the air fryer lid on the base unit. You’ll know it’s correctly placed when you hear a chime.

  • The display will go from OFF to the default Air Fry time and temperature. This is usually whatever the last programmed settings were.

  • Once the air frying time and temperature have been set (e.g. 00:10 for 10 minutes and 400F for 400 degrees Fahrenheit), press the Start button.
  • The air fryer fan will come on and the display will change to On.
  • Once the Instant Pot has reached the desired temperature, the display will change from On to the temperature and time you programmed it for (e.g. 00:10 and 400F)

  • The time will count down and partway through cooking (in this case 00:05), the air fryer will chime and the display will say Turn Food.
  • At any point during the cooking process, you can lift the lid to check on the food, which will temporarily pause the timer and the display will say Lid.

  • If you wish to turn the food, lift the air fryer lid and place it on the protective pad. **
  • Turn the food using tongs or a spatula.
  • Put the lid back on. The air fryer will chime and the timer will continue counting down.

** Lifting the lid pauses the timer for 3 minutes. If within that time, you don’t resume cooking, the air fryer program will be canceled. If you don’t lift the lid when the Turn Food message shows, cooking will automatically continue after 10 seconds.

  • The time will continue to count down.
  • When there’s 1 minute left, the time will count down in seconds.

  • When the time reaches 00:00, the display will say End and you’ll hear a chime.
  • Lift the lid and place it on the protective pad. The display will say OFF.
  • Use silicone gloves to remove the food.

Roast, Bake, Broil, and Dehydrate

The Roast, Bake, Broil, and Dehydrate smart programs all work in the same way as the Air Fry smart program. Press the button, program the temperature and time (if you wish to change the default), and press Start.

Roast – (default 40 minutes, 380 degrees Fahrenheit). Use to roast chicken, steak, or other meats.
Bake – (default 30 minutes, 365 degrees Fahrenheit). Use to bake cakes and anything that you would normally bake in the oven. Check out my air fryer pound cake recipe – it’s so good!
Broil – (default 10 minutes, 400 degrees Fahrenheit). Use to crisp up the top of foods. I use this function to crisp up Teriyaki Chicken Wings, Jamaican Jerk Chicken or Thai Chicken (Gai Yang) after pressure cooking.
Dehydrate – (default 6 hours, 125 degrees Fahrenheit). Use to dehydrate foods to make fruit leather, beef jerky, or veggie chips.

The Air Fry and Roast buttons give you the message Turn Food halfway through the cooking cycle. The other functions don’t have that message.


Tips for Success with Air Frying


  1. Avoid foods dipped in batter. If you want to coat the food, use an egg wash and breadcrumb coating.
  2. Make sure there’s enough space around the food to allow the air to circulate. Avoid overcrowding.
  3. Place food in a single layer. You can use the multi-level air fryer basket to have two layers of food. Note that the broil tray is cumbersome to remove, especially when hot. So avoid putting food that needs to be turned over, in the lower tier.
  4. Pat food dry before air frying. This is especially applicable to vegetables – it gets them crisp.
  5. Coat the air fryer basket with vegetable oil before adding food.
  6. Spray the food with a spritz of vegetable oil. Be liberal – this keeps it from sticking! No matter how much you spray, it won’t come close to how much you’d use to fry the food. But there is such a thing as too much oil – you don’t want the oil to drip into the inner pot.
  7. Spray the food halfway through cooking, if needed. This ensures crispness.
  8. Don’t use canned nonstick cooking spray because it has ingredients that can damage the coating of the air fryer basket. Instead, use a refillable oil spray bottle.
  9. You can also use parchment paper rounds to line the air fryer basket. This helps prevent sticking. I like to use the kind with precut holes that allow the air to circulate. You can also cut up parchment paper into rounds and poke some holes in them.
  10. Make sure food isn’t piled so high that it touches the heating element.
  11. For best results, preheat the air fryer lid before adding food. This isn’t absolutely essential but recommended.
  12. Don’t be afraid to check on the food by lifting the lid up any time during the cooking process. The timer will pause for up to 3 minutes.
  13. Depending on the type of food, turning the food partway through air frying cooks it evenly.
  14. Don’t use a nonstick ceramic-coated inner pot; use only stainless steel.
  15. Purchase some small baking pans and oven-safe dishes to be able to make your favorite oven recipes in the air fryer.
  16. Cook frozen foods at 400 degrees Fahrenheit, but keep an eye to make sure they don’t burn.
  17. Reheat foods at 350 degrees Fahrenheit (preheating is recommended). The amount of time will vary depending on the food but start with 3 to 5 minutes. The air fryer does a great job reheating fries, pizza, nuggets, etc. It’s much better than microwaving them.
  18. Clean the inner pot and air fryer basket after use. This prevents stuck food particles from getting charred the next time you use the air fryer lid.
  19. If you’re trying to decrease your intake of desserts and sweets, use the air fryer to make smaller quantities of your favorite desserts e.g. you can bake just a few cookies – less temptation!

I adapted the recipe from my Indian curry soup recipe.

This spicy chicken curry soup recipe contains an ingredient that I don’t use very often: curry powder. Confession time: I once was a curry powder snob, as in ‘no one who cooks authentic Indian food would EVER use curry powder!’

But that was before I tried it out in this recipe, and I realized that there are definitely occasions when curry powder is a great option.

Most Indian cooks don’t use curry powder in their cooking, but rather use individual spice flavorings (like coriander, cumin, turmeric, garam masala) or prepared spice mixes (available at Indian grocery stores) that are specifically tailored for each dish.

Curry powder was invented back when India was a British colony, and the British prepared it as a spice mix to duplicate the intricate flavorings they liked in Indian cuisine.

Here are some tips for getting the best results when making this chicken curry soup:

🧈 Butter: I use either butter or ghee for flavor, especially homemade ghee using my Instant Pot ghee recipe. For fewer calories, substitute with vegetable oil.

🌴 Coconut Oil: Use coconut oil for a stronger coconut flavor.

🌿 Fresh Spices: Fresh curry powder is essential for robust flavor. Toss any old spices, and avoid generic brands. I recommend McCormick, Spice Islands, or Simply Organic. Adjust salt based on the brand’s salt content. Increase the quantity for more intensity. Indian curry paste will also work.

🥥 Coconut Milk: I prefer full-fat coconut milk, like Aroy-D or Chaokoh. Some readers like Trader Joe’s brand. If you want a creamy alternative, use ½ cup of heavy cream as some recipes for mulligatawny soup.

🌶️ Spice Level: For heat, add more jalapeño or switch to serrano peppers, which offer consistent spiciness. Omit jalapeños for a milder soup.

🍅 Tomatoes: Canned diced tomatoes work great, but fresh tomatoes can also be used.

🍗 Chicken: I prefer boneless, skinless chicken thighs for tenderness, especially in the Instant Pot. Chicken breast is fine, too. You can use shredded rotisserie chicken; just add it after simmering the broth for 5 to 7 minutes on the stovetop or after pressure cooking. Adjust the salt accordingly.

🥦 Vegetables: Add more veggies like diced carrots, sweet potatoes, peas, and potatoes for added nutrition.

Should the tomatoes be drained?

Add the tomatoes with their juices; there’s no need to drain.

How can I make this recipe vegetarian?

Use tofu instead of chicken and vegetable broth instead of chicken broth to make this recipe vegetarian. Another option is to add some red lentils (which are quick-cooking) or canned chickpeas.

What can I use instead of cilantro?

If you don’t like the taste of cilantro, you can omit it. You can also sprinkle some chopped parsley.

The curry soup is too spicy. What can I do?

Add more coconut milk to the soup to make it less spicy. Start with a couple of tablespoons and add more to taste. Another option is to add diced potatoes to absorb some of the spiciness.

How to Make Coconut Curry Soup

♨️ Stovetop Method

  1. Saute onions, spices and chicken
  2. Add broth and tomatoes
  3. Simmer soup
  4. Add coconut milk and spinach
  5. Garnish with cilantro

  1. Heat a large pot or dutch oven over medium heat. Heat ghee, butter, or oil over medium heat. Stir in onion, garlic, ginger, and jalapenos, and saute the onion mixture until onions are light golden brown, about 5 minutes. Turn heat off and add curry powder, salt, and pepper. Stir till fragrant. If the spices are burning or the food is sticking to the bottom, deglaze with a small amount of chicken stock or broth.
  2. Add chicken.
  3. Saute chicken until chicken pieces begin to lose their pink color and start to brown.
  4. Stir in the tomatoes and add chicken broth. Let the soup come to a boil, lower heat and simmer for 10 minutes or until the chicken is cooked through.

  1. Stir in the coconut milk. *
  2. Add spinach and simmer until spinach wilts and soup is heated through.
  3. Turn off heat and stir in cilantro.
  4. Serve this flavorful soup over rice or with crusty bread.

* If you want to make the soup thicker, feel free to mix together one tablespoon cornstarch and one tablespoon broth and add it to the simmering soup. Stir until thickened.

⏲️ Instant Pot Method

  1. Turn on Saute Mode.
  2. Saute onions, garlic, ginger, and jalapenos in ghee, butter, or oil.
  3. Press Cancel and saute curry powder, salt, pepper briefly.
  4. Be sure to deglaze.
  5. Saute chicken and stir in broth. Add the tomatoes, but don’t stir them in.
  6. Pressure cook and release pressure using natural release.
  7. Stir in Coconut milk and heat until the soup thickens.
  8. Add spinach, select Saute mode, and heat until spinach wilts and soup is heated through.
  9. Press Cancel and stir in cilantro.

Ingredients

  • 2 tablespoon ghee  or butter
  • 1 cup onion chopped
  • 2 tablespoon garlic minced
  • 2 tablespoon ginger finely chopped
  • 1 jalapeno sliced (optional)
  • 2 Tbsp  curry powder
  • 1 ½ teaspoon salt (or to taste) See Note 1
  • 1 teaspoon black pepper powder
  • 2 lbs boneless skinless chicken thighs (1 kg) cut into 1 inch cubes
  • 4 cups  low sodium chicken broth low sodium
  • 1 cup diced tomatoes canned or fresh
  • 1 cup coconut milk preferably Aroy-D or Chaokoh brand
  • 3 cups baby spinach chopped
  • ¼ cup cilantro chopped

Instructions

Instant Pot Pressure Cooker Instructions

  • Select Saute mode and allow the Instant Pot to heat up. Once the inner pot has heated up, add the 2 tablespoon ghee  or butter.
  • Once the ghee has heated up, add 1 cup onion and saute until light golden brown, about 2 to 3 minutes.
  • Add 2 tablespoon garlic, 2 tablespoon ginger, and 1 jalapeno and cook mixture until fragrant, about 1 minute.
  • Press Cancel. The spices will cook in the residual heat.
  • Add 2 Tbsp  curry powder, 1 ½ teaspoon salt and 1 teaspoon black pepper powder and stir till fragrant, about 30 seconds [See Note 2]
  • Add 2 lbs boneless skinless chicken thighs and stir to coat with the spice mixture.
  • Stir in ¼ cup of broth to deglaze. There should be no brown bits stuck to the bottom of the inner pot.
  • Stir in remaining broth. Add the 1 cup diced tomatoes, but don't stir.
  • Close the Instant Pot lid and pressure cook on High Pressure for 5 minutes.
  • Allow the pressure to release naturally (NPR).  If you're pressed for time, after 10 to 15 minutes, release any remaining pressure. [Read More: The Different Pressure Release Methods]
  • Press Cancel and open the Instant Pot.
  • Stir in 3 cups baby spinach and 1 cup coconut milk.
  • Cook soup in Saute mode until spinach wilts and soup is heated through.
  • Stir in cilantro and serve soup in individual soup bowls over rice or with crusty bread.

Stovetop Instructions

  • Heat butter or ghee in a large heavy-bottomed pot over medium-high heat.
  • Add onion, garlic, ginger, and jalapeños to the pot.  Saute for a couple of minutes or until the onion is lightly browned.
  • Add curry powder, garlic and salt and stir until fragrant, about 30 seconds to a minute. 
  • Stir in chicken broth, tomatoes, and chicken.  Allow the soup to come to a boil and reduce heat to medium. Simmer for 10 minutes or until the chicken is cooked through.
  • Stir in the coconut milk and heat till the soup thickens. [See Note 3]
  • Add the spinach and heat through till the spinach wilts.
  • Garnish with ¼ cup cilantro.

  • Prep time does not include steps that are already accounted for in the ingredient list, e.g. chopped onions, minced garlic, diced chicken, etc.
Note 1: Adjust the quantity of salt based on whether your curry powder already has salt and to suit your taste preference.
Note 2: You don’t want to burn the spices! If necessary, add a tablespoon of broth to deglaze the inner pot. If the Instant Pot becomes too hot and the ingredients are burning, turn it off to cool it down and then turn it back on when it’s cooler. 
Note 3: If the soup isn’t thick enough, combine one tablespoon each of cornstarch and chicken broth, add to the simmering soup, and heat through until thickened.

Pressure Release Valve Parts 

Here are some of the parts that I refer to throughout this article. The steam release mechanism varies by Instant Pot model; some newer models may look slightly different.

  • Float Valve: a metal pin that pops up once the Instant Pot has pressurized.
  • Steam Release Valve: Steam is released through the vents in the steam release valve. It’s also referred to as the Instant Pot pressure valve, pressure release valve, or venting knob.
  • Steam Release Handle: Steam is released through the vents in the steam release handle. To seal the Instant Pot pressure cooker, turn this pressure knob to the Sealing position, and to release pressure, move it to the Venting position. The steam release handle is sometimes referred to as the Instant Pot venting knob or pressure valve.
  • Steam Release Button: Click it counterclockwise to spring it up into the Sealing position. To release pressure, push the button until it clicks down into place in the Venting position.
  • Steam Release Switch: To put it in Sealing mode, slide it into the Seal position. To release pressure, slide it into the Vent position.

  • Silicone Sealing Ring: a flexible ring that creates a seal between the Instant Pot’s base unit and the lid, allowing pressure to build up and pressurize the Instant Pot. It’s also referred to as a gasket.
  • Float Valve: a metal pin covered with a silicone cover on the inside of the lid, which keeps it in place. It can be removed and cleaned.
  • Anti-block Shield: metal cover that prevents food particles from entering and blocking the steam release pipe. The anti-block shield covers the exhaust valve and can be removed and cleaned.

Why Is Your Instant Pot Not Sealing?

One of the most common issues people encounter with Instant Pot (aka Instapot) is that their Instant Pot won’t pressurize or seal.

This happens to me, and I’m sure it happens to most electric pressure cooker users. Usually, it’s an easy fix!

New Instant Pot users, in particular, have difficulty troubleshooting what’s wrong when their Instant Pot is not sealing. They may think that the pressure sensor is busted or something is wrong with the unit.

If the countdown timer has begun and the float valve is not rising, the Instant Pot won’t seal.

If the Instant Pot is not pressurizing but counting down, timer has begun and the float valve is not rising, the Instant Pot won’t seal.

I’ve compiled a list of possible reasons why your Instant Pot is not pressurizing. You’ll most likely be able to troubleshoot your issue in one of the following cases.

Another common problem when the Instant Pot is trying to come to full pressure is the Burn or Food Burn Message, so I encourage you to read that article too!

📍 PRO TIP

  • There are various reasons for sealing problems, ranging from the Instant Pot sealing ring not being in place to the pressure release handle being in the Venting position. I’ll go into detail shortly.
  • Once you diagnose the reason for your Instant Pot not coming to pressure, make sure you have enough liquid in the Instant Pot before you continue with pressure cooking.
  • Often, some of the liquid evaporates while the steam is leaking. If you restart the pressure cooking process without compensating for the lost liquid, you will likely have more sealing issues.

Should steam come out of the Instant Pot when pressurizing?

Yes, steam will escape from the steam release and float valves until the Instant Pot is sealed.

When you initially program the Instant Pot to pressure cook, the display says On. After a few minutes (anywhere from 5 to 30 minutes, depending on the quantity and temperature of the food), you’ll see steam coming out of the pressure release (steam release) handle and/or float valve on the top of the lid. This is perfectly normal.

After some hissing, steaming, and hesitation, the float valve usually rises to the Up position, and the Instant Pot is sealed. After a few minutes, the display should start counting down from the number of minutes you programmed the Instant Pot to pressure cook.

Should steam come out of the Instant Pot once sealed?

No heavy steam should come out once the float valve is in the sealing position (up position).

However, I have occasionally seen tiny wisps of steam when it’s sealed, and this is not a cause for concern. This usually happens when cooking something with a lot of liquid, such as soup.


1. The Instant Pot Pressure Valve is in Venting Position

Different models of Instant Pot have different pressure release mechanisms.

  • Steam Release Handle: The venting knob can be turned from Venting to Sealing.
  • Steam Release Button: When the button is up, it seals, and when it’s down, it vents.
  • Steam Release Switch: The switch can go from Vent to Seal.

When using the Instant Pot for something other than Slow Cook, Yogurt, or Sous Vide, the pressure release needs to be in the Sealing position.

SOLUTION: Open the Instant Pot and make sure there’s enough liquid. If too much liquid has evaporated, the Instant Pot won’t pressurize, so add more liquid if necessary. Close the Instant Pot, ensure it’s in Sealing position, and resume pressure cooking.

If you have trouble closing the lid, it’s probably because the contents are hot. Move the steam release handle to the Venting position and make sure the lid is properly closed. Then, move the steam release handle to the Sealing position.


2. The Silicone Sealing Ring (Sealing Gasket) is not Properly Seated

If the ring cannot be rotated around in the sealing ring rack, it’s not seated correctly. You should be able to turn it in place, maybe with a bit of effort.  If the sealing ring hasn’t been installed correctly, you may find that steam is leaking out of the sides of the lid.

SOLUTION: Open the Instant Pot and push down the sealing ring all the way around the ring rack to make sure it’s properly seated. Then, try turning it in the ring rack. It should move/rotate around the ring rack. A new sealing ring can be harder to move, but you should be able to.


3. Sealing Ring is Missing/Misplaced

It’s possible that the sealing ring or gasket was removed for cleaning and not placed back in the Instant Pot lid’s ring rack. If your sealing ring is missing, you will see the Instant Pot leaking steam from the sides of the lid.

SOLUTION: Replace the Instant Pot gasket.


4. Not Enough Liquid in Instant Pot to Build Pressure

This is one of the most common Instant Pot issues when it’s trying to come to pressure. According to the official manual, the Instant Pot requires at least 1 cup of liquid. I’ve used as little as ½ cup and done fine with many Instant Pot recipes. Remember that it needs to be thin liquid such as water, broth, lemon juice, and soy sauce.

Some liquids like canned tomato sauce are too dense and require thinning out with broth or water. If your Instant Pot isn’t sealing, this is one of the more common reasons.

SOLUTION: Add more water or broth. If the final result is a dish that’s too thin or liquidy, you can use the Saute function and let the liquid reduce and thicken, or you can add a thickener like cornstarch, flour, potato flakes, etc.


 5. Food is Scorched at the Bottom of the Inner Pot

If food is scorched on the bottom of the pot, the liquid won’t make contact with the bottom, and the Instant Pot won’t build steam. Here are a few of the reasons food gets scorched on the bottom of the Instant Pot:

  • After browning or sauteing, if browned bits are sticking to the bottom of the pot, you need to deglaze the pot. Deglazing involves adding liquid (e.g., water, broth) to the heated pot and stirring to allow the browned bits to come free.
  • The liquid is too thick. This can happen with thick sauces such as tomato sauce, mole sauce, or pasta sauce. Thick sauces should be placed at the top without stirring them in, and you can also thin them out with water or broth.
  • Starchy foods are making contact with the bottom of the inner pot. Starchy foods, such as pasta, rice, etc., should be layered on top of other ingredients without stirring them in.
  •  The Instant Pot is overfilled with food and there isn’t enough room for the liquid to circulate.

SOLUTION: Open the Instant Pot, transfer the contents to a large bowl, and clean the inner pot by scraping it with a plastic or wooden scraper. (You might even need to soak it with warm water and dish detergent for a bit.)  

I have several of these pan scrapers that work well. Once the inner pot is clean, resume cooking, but add more liquid.

6. The Sealing Ring has Expanded Too Much and Instapot Won’t Seal Properly

The sealing ring naturally expands when it’s heated. Once cool, it should return to its natural state. If you’ve just finished cooking something, the sealing ring may still be in its expanded state, preventing the Instant Pot from sealing.

SOLUTION: Try placing the Instant Pot sealing ring in the freezer or running it under cold water to contract it. You can also try turning the sealing ring over and replacing it.


 7. Instant Pot Sealing Ring has Debris or Food

The Instant Pot sealing ring must be clean to create a proper seal.

SOLUTION: Make sure no food is stuck to the sealing ring and clean it with soap and water.


8. Too Much Water has Evaporated Before Problem was Fixed

If the pot wasn’t initially sealed properly and you corrected the problem, it’s possible that too much liquid evaporated, leaving the pot without enough liquid in the pot to create the required steam. This can cause the Instant Pot to not pressurize.

SOLUTION: Open the Instant Pot and check the quantity of liquid. You need ½ cup to 1 cup. Add more liquid if necessary.


9. The Sealing Ring is Damaged or Torn

If your seal is heavily used or pulled on too hard, it can wear out or tear, and you may need a new seal.

SOLUTION: Purchase a new sealing ring. Keeping a spare sealing ring on hand is always a good idea.


10. Timer Function was Used Instead of Manual or Pressure Cook

Some older models of the Instant Pot have a Timer button. The Timer button allows you to set a delayed start time. When you press the timer button, the time that shows up is the number of hours until cooking starts. So, if your Instant Pot timer is not starting, this could be the reason.

SOLUTION: Press Cancel to cancel the timer. Select Manual or Pressure Cook mode (or another cooking option, e.g., Poultry or Meat) and wait a few seconds for the Instant Pot display to change to On. If you wish to use the timer functionality, select the cooking function (e.g., Manual, Pressure Cook, Poultry) first, then press Timer or Delay Start (on newer models).


11. The Instant Pot Lid Area or Liner is Dirty

The Instant Pot lid and the area where it fits on the base unit need to be clean and free of food debris.

If food is stuck to the rim of the Instant Pot inner pot, the seal will not be tight when you close the Instant Pot lid, and steam can escape.

SOLUTION: Open the Instant Pot lid and use a cloth or clean toothbrush to wipe around the rim of the Instant Pot lid and the base unit. Thoroughly clean the inside, outside, and rim of the inner pot.


12. The Instant Pot Float Valve or Anti-Block Shield Has Debris

When you cook pasta or other messy foods, the Instant Pot valve and anti block shield can become dirty and obstructed.

SOLUTION: Remove the anti-block shield and float valve and clean with a clean toothbrush and soapy water.  Clean the hole that the float valve goes into with a brush or pipe cleaner.  Clean all parts of the lid.  Dry well and replace the parts.

13. Food is Frozen

Frozen food takes longer to cook, and the Instant Pot takes longer to come to pressure.

SOLUTION: If you’ve added frozen food to the pot, wait a bit longer to see if the Instant Pot will seal. If you’re cooking a large quantity of frozen food, I recommend thawing it first, because it will take a very long time to come to pressure and cook!


14. Large Quantity of Liquid in Instant Pot

If you’re making soup or cooking a larger quantity of food in the Instant Pot, you may have a lot of liquid.  The more liquid you have, the longer it takes for the Instant Pot to seal.

You also need to ensure that your ingredients do not exceed the Max Fill mark (⅔ full). For foods that expand (e.g., rice, beans, and pasta), you should not exceed the ½ full mark.

SOLUTION: Wait longer to see if the Instant Pot will seal. If you’re above the recommended max fill lines, split up the recipe and cook it in two batches.


15. The Float Valve is Up, but Instant Pot Just Says On and the Countdown Timer Not Starting

If the Instant Pot just says ‘On,’ it could be because there is a delay between the float valve rising up and the timer starting to countdown.

I’ve had this happen when I’ve used less liquid than is recommended. The Instant Pot comes to pressure, and the float valve comes up, but the display says ‘On‘ and never counts down. In my case, it was just a one-time thing.


SOLUTION: Wait a bit to let the timer begin. The float valve coming up locks the lid but the Instant Pot may need more time to pressurize in order for the timer to start. If the ‘On‘ never changes to counting down, you must set an external timer and press Cancel when the time’s up. Try doing a water test to make sure the problem doesn’t recur. If the problem persists, open a support ticket.


16. The Power Cord is Loose

Some Instant Pots have detachable power cords. The power cord needs to be pushed into the base unit all the way.  It can come loose if you move the Instant Pot or accidentally bump it.

SOLUTION: Push the power cord all the way into the base unit. Also, make sure the power cord is securely attached to the wall outlet. Test the outlet to make sure it is working with another appliance or an electrical outlet tester.


17. The Wrong Size Inner Pot was Used

If you have multiple Instant Pots of different sizes, you may be using the wrong stainless steel inner pot/liner. The 6-quart inner pot fits into the 8-quart Instant Pot. It’s an easy mistake and a common issue!

SOLUTION: Make sure you use the correct inner pot.


18. The Float Valve is Missing

If you remove the float valve while cleaning the Instant Pot lid, you may forget to replace it.

SOLUTION: Put the float valve back in and replace the silicone cover.


19. The Steam Release Handle is Missing

If you remove the steam release handle while cleaning the Instant Pot lid, you may forget to replace it.

SOLUTION: Put the steam release handle back onto the lid and push it down to make sure it’s properly seated on the steam release pipe.


20. The Lid Locking Pin is Stuck

The spring-loaded pin (lid locking pin) on the rim at the back of the lid could be stuck in the retracted position and this means your Instant Pot lid won’t close properly.

SOLUTION: Push on it from the inside and outside of the lid or gently jiggle it to get the spring mechanism to reset the pin.


21. The Exhaust Valve is Loose

In rare cases, the exhaust valve inside the anti-block shield can become loose, such as during shipping.

SOLUTION: Carefully tighten the valve so it’s not loose anymore.  Don’t overly tighten it.


22. The Steam Release Handle is Not Properly Seated

If you remove the Instant Pot steam release valve or handle while cleaning the lid, it may not be put back correctly. It needs to be pushed in all the way. If it isn’t securely seated, steam will leak from the valve or handle.

SOLUTION: Push in the Steam Release Valve and move it from Sealing to Venting a few times so it sits properly.


23. Instant Pot Display Says noPr

If the Instant Pot is showing the noPr error message, it could be that it couldn’t reach a high enough temperature during the pre-heating stage. This could be due to the quantity of food or liquid, frozen ingredients, or any of the reasons in this article.

SOLUTION: If you’re not making any of the above mistakes but get the noPr error, press Cancel and try restarting the pressure cooking program again.

24. Instant Pot Leaking Steam Even Though the Float Valve is Up

There’s a metal safety clip inside some older pressure release valves. It appears to prevent the Instant Pot from overpressurizing.

Unfortunately, this metal ring can get bent over time or through shipping. This causes the steam release handle to tilt in the sealing position as if it were set to the Venting, allowing steam to escape.

Newer models of the steam release handle and sealing valve do not have this problem since they now have a silicone retaining ring that prevents them from being improperly seated on the steam release pipe, thus creating a good seal.

SOLUTION: Purchase a new steam release handle or remove the metal ring, straighten it with a pair of pliers, and put it back in. Here’s a Youtuber who’s posted a video on how to fix the Instant Pot not building pressure due to this issue:

25. No Liquid for Pot in Pot Cooking

The pot-in-pot cooking method is used for cakes, eggs, lasagna, and other dishes that require steaming. If you don’t add water to the bottom of the pot, it will not come to pressure.


I hope this Instant Pot troubleshooting guide has helped you find out the reason for your Instant Pot float valve not sealing so you can get back to cooking your favorite Instant Pot recipes. Over time and with experience, you should encounter this problem less frequently.  

If you continue to have issues with the Instant Pot not pressurizing, try to do a water test to see if it’s an issue with your unit. If the water test fails, you should either return the Instant Pot to the place of purchase or contact Instant Pot customer service to file a support ticket.

Introduction

My husband’s family comes from Goa, which is a former Portuguese colony in India. One of the dishes he grew up with is Goa Sausage Chili Fry. It’s a super-simple recipe with three ingredients!

Spicy sausage, onions, and potatoes are simmered over low heat with little to no water. Most of the wonderful flavors come from the Goa sausage (also known as Choris or Chouriços de Goa), which is very spicy and tangy!

The sausages are ubiquitous all over Goa, draped like necklaces in every mom-and-pop grocery store. If you’d like to learn more about these uniquely Goan sausages, I recommend this article about Goa Sausages and their history.

My mother-in-law Grace would sneak some into her suitcase when she used to visit us in years past. Although you can buy Goa sausages here in the US, I wanted to be able to make something similar to Goa Sausage Chili Fry with easily available ingredients.

That led me to develop this recipe using Spanish chorizo. I give the Chorizo a familiar Goa Sausage flavor by adding in the spices that go into Goa sausages. There’s so much flavor in this easy and comforting dish.

Tips and Substitutions


Onions

I tend to chop the onions into small pieces because my son isn’t a big fan of onions, especially when they’re sliced and in long pieces. However, if you like onions, I recommend that you thinly slice the onions.


Spices

To enhance the flavor of the chorizos and give them the flavor profile of Goa sausage, I’ve included spices that go into the traditional preparation, but you can choose to omit any or all of these spices depending on your personal tastes and the type of sausage you’re using:

  • cumin
  • cloves
  • turmeric
  • cinnamon
  • Kashmiri chili powder

Kashmiri Chili Powder

Kashmiri chili powder is a special kind of Indian chili powder that has a bright red color without being too spicy. I actually use more than is called for in the recipe, so if you like your curries on the spicy side, you can add more.

It can be found at Indian grocery stores or on amazon. If you can’t find Kashmiri chili powder, go ahead and substitute a smaller quantity of cayenne pepper.

The great thing about Indian dishes is that you can make them as mild as you like by adjusting the quantity of chili powder or substituting paprika for the chili powder.  The recipe, as written, is not very spicy (by my Indian standards!)

I list the chili powder as an optional ingredient because I know some people are sensitive to spice. Some chorizos are quite spicy, so use your discretion. If you wish, you can also saute sliced jalapeno peppers or serrano peppers to the onion mixture to make the dish even spicier.


Tomato

Tomato paste isn’t part of the authentic preparation of Goa sausage and potatoes (Goa Sausage Chili Fry). However, I like the flavor and color that the tomato adds to the chorizo.

Vinegar

You can use distilled vinegar, apple cider vinegar, or coconut vinegar. The vinegar adds a sourness that complements the spices of the chorizo. If you want to, reduce the quantity to 1 or 2 teaspoons.


Potatoes

I use Yukon gold potatoes for most of my recipes including this one. For the Instant Pot version, I cut the potatoes into 1 ½ to 2-inch pieces so they don’t get overcooked. For the stovetop version, I cut the potatoes into smaller 1-inch pieces.


Chorizo

There are many different types of chorizo available in supermarkets. I’ve tried this recipe with the Mexican raw chorizo that comes in a plastic tube and with raw chorizo from the meat counter.

What happens with these types of chorizo is that they can cause the Burn Error or they disintegrate upon pressure cooking. Feel free to use them in the stovetop recipe but for the Instant Pot recipe, smoked sausage is just easier.

If you must use raw sausage, cut it into large chunks and make sure it doesn’t touch the bottom of the inner pot when pressure cooking; let it rest on top of the potatoes. At the end when you’re sauteing, be careful the sausage doesn’t stick to the bottom.

If you can’t find smoked chorizo, you can use Portuguese linguiça, Cajun andouille, or even Polish kielbasa.

One thing to keep in mind is that chorizo has a fair amount of fat. That fat gets released into the gravy and adds a lot of flavor but you can dab the surface of the finished product with a clean paper towel to remove some of that fat, if you wish.


Burn Message

This recipe was tested in a new-ish 6 quart Instant Pot Duo Evo Plus and I’ve had no issues with the dreaded Food Burn Message as long as I layer the ingredients as outlined above.

However, some Instant Pots are just finicky, so be on the lookout for the Burn error. As a precaution you can add an extra ¼ cup of water and then just thicken the Instant Pot chorizo at the end, in Saute mode.

How to Make Chorizo and Potato in the Instant Pot (Step by Step Instructions)

  1. Turn on Saute Mode.
  2. Saute onion, garlic, and ginger.
  3. Stir in spices and deglaze.
  4. Add water, potatoes, and chorizo.
  5. Pressure cook.
  6. Release pressure.
  7. Reduce to thicken.

  • Once the Instant Pot has pre-heated, add oil and allow the oil to heat up.
  • Stir in onions, garlic, and ginger and saute till onions are soft, about 1 to 2 minutes

  • Instant Pot display will change to ‘On’.
  • Once the Instant Pot is pressurized, the float valve will go up.
  • The display will count down to 0; it will then switch to ‘Keep Warm’ mode and display ‘L0:00’  or ’00 00′ and begin to count up the number of minutes since pressure cooking completed.

How to Quick Release Pressure (QR) on the DUO

  • Move the steam release handle to Venting. Steam will come out of the steam release handle.
  • When your Instant Pot is depressurized, the float valve will be in the down position.
  • Press Cancel and open the Instant Pot.

How to Quick Release Pressure (QR) on the ULTRA

  • Press down on the Steam Release Button until it locks into place, and steam begins to come out of the Steam Release Valve.

Reduce to Thicken

  • If there’s too much liquid, select Saute mode and let the mixture thicken to desired consistency, stirring frequently.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 ½ cups onion chopped
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger minced
  • ½ teaspoon black pepper powder
  • 1 teaspoon cumin powder
  • ⅛ teaspoon ground cloves
  • ½ teaspoon turmeric powder
  • ½ teaspoon cinnamon powder
  • 1 teaspoon Kashmiri chili powder or cayenne pepper (to taste)
  • 1 ¼ teaspoon salt or to taste!
  • 1 tablespoon white vinegar
  • 1 tablespoon tomato paste
  • 11 oz. smoked sausage (300 grams) chorizo, linguica, or andouille
  • 1 ¼ cup Yukon gold potatoes cubed into 1 ½ inch pieces
  • ½ cup water (¼ cup for stovetop recipe)

Instructions

Instant Pot Pressure Cooker Instructions

  • Select Saute and allow the Instant Pot to heat up. Once the inner pot has heated up, add oil.
  • Stir in onion, garlic, and ginger and saute the onion mixture until onions are translucent, about 3 minutes.
  • Press Cancel. The spices in the next step will cook in the residual heat.
  • Stir in black pepper, cumin, cloves, turmeric, cinnamon, chili powder (if using), and salt.
  • Stir the spices with the onion mixture for about 30 seconds. Deglaze with a small amount of water if you find that the spices are burning.
  • Stir in the water and vinegar.
  • Layer potatoes, chorizo and tomato paste. Don't stir. This will help you avoid the Burn Message.
  • Close the lid and pressure cook on High Pressure for 7 minutes.
  • Do a Quick Release of pressure (QR). [Read More: The Different Pressure Release Methods]
  • Open the lid.
  • If there's excess liquid, select Saute mode. Heat through until thickened to your liking, stirring frequently, about 2 to 5 minutes. Use a splatter screen to prevent splatter.
  • Press Cancel.
  • Serve with crusty French bread, with eggs, or over basmati rice.

Stovetop Instructions

  • Heat the oil in a medium heavy-bottomed pot over medium heat.
  • Stir in onion, garlic, and ginger and saute the onion mixture until onions are translucent, about 3 minutes. Deglaze as needed.
  • Stir in black pepper, cumin, cloves, turmeric, cinnamon, chili powder (if using), and salt. Saute for 30 seconds or until fragrant, making sure the spices don't burn.
  • Stir in the tomato paste and saute for 30 seconds. Deglaze with a couple of tablespoons of water.
  • Add vinegar and ¼ cup water. Layer the chorizo over the onion mixture and layer the potatoes over the chorizo.
  • Lower heat, cover and simmer for 20 to 30 minutes or until the potatoes are cooked through. Stir occasionally and add more water as needed.
  • The end result will be a thick gravy with creamy potatoes.
  • Serve with crusty French bread, eggs, or basmati rice.

  • The recipe calls for smoked sausage.  If using raw sausage, break it into big chunks and make sure they don’t touch the bottom.

There are many Instant Pot symbols and icons that appear on the display panel. It can get confusing because they vary from model to model. In this guide, I tell you what the display panel fields, symbols, and icons mean on every Instant Pot model.

If you own a simpler model such as the Lux, Duo, Duo Crisp or Duo Gourmet you’ll notice that it’s missing from this article. That’s because those models have no icons on the display unit. They only show time in the display unit – cook time, keep warm time, and delay start time.

Instant Pot Pro Crisp Symbols and Icons

The Instant Pot Pro Crisp model has a fairly complex display, but once you understand how to use it, you’ll be able to easily program it. It’s very similar to the Instant Pot Duo Evo Plus.

    The speaker icon is displayed when the sound is turned on. If the sound is off, the speaker icon will have a line through it.
  2. Delay timer
    This clock icon is displayed when the Delay Start button has been pressed.
  3. Keep warm
    The icon of a pot with steam coming out shows up when the Keep Warm button has been pressed.
  4. Air fryer
    The fan symbol shows that the Air Fryer smart program is in use.
  5. Progress Bar
    Shows Pre-heating, Cooking, and Keep Warm progress.
  6. Time/Status Message
    Shows the Cook time, Delay Start time, Keep Warm time, or Status Message.
  7. Sous Vide and Air Fryer Temperature
    Displays the temperature in Fahrenheit (F) or Celsius (C) during Sous Vide or Air Fry modes.
  8. Pressure
    Shows whether the pressure level is set to None, Low or High pressure.
  9. Temperature
    Shows whether the temperature setting is Low, High or Custom.

Instant Pot Max Symbols and Icons

The Instant Pot Max model has one of the more complex displays, so here is a summary of all the different parts of the display to help you decode the symbols.

  1. Pressure
    The pressure indicator symbol is on when the pressure cooker is still pressurized. The lid is locked and cannot be removed when the icon is on.
  2. Adjust Settings
    The gear with a lock symbol shows that settings cannot be adjusted. Touching the gear when the Instant Pot Max is in Standby mode will make the lock disappear and allow the settings to be changed.
  3. Unit of Temperature
    Touching the thermometer icon with F and C allows you to change the unit of temperature between Fahrenheit and Celsius.
  4. Altitude
    Touching the mountain icon lets you toggle between feet (ft) and meters (m) and set your altitude. The Instant Pot Max will adjust cook time based on the setting.
  5. Sound
    Touching the speaker icon allows you to toggle the sound on and off.
  6. Progress Bar
    Shows Pre-heat, Cook, and Keep Warm progress.
  7. Time/Status Message
    HH:MM (H=hour, M=minute).
    – Shows Clock when the Instant Pot Max is in Standby mode. Touch the Hour field to change the hour and touch the Minute field to change the minutes.
    – Shows Cook time, Delay Start time, or Keep Warm time when Instant Pot is in operation. – This section also displays Status Messages.
  8. AM/PM and ft/m
    – AM or PM is shown when the clock is displayed.
    – When altitude is being displayed, either feet (ft) or meters (m) will be shown, depending on what unit you’ve selected.
  9. Pressure
    Touching the pressure bar icons allows you to set the pressure to Low, High, or Max pressure.
  10. Temperature
    Touching the temperature field allows you to toggle between Low, High, and Custom. This field also displays the temperature for Sous Vide, Canning, and Custom temperature settings.
  11. Keep Warm
    Touching the icon of a pot with steam coming out allows you to turn the Keep Warm function on and off.
  12. Venting
    There are three Instant Pot Max venting symbols that allow you to select the venting method. The circle with a line through it is for Natural Release (NR). The dotted circle symbol is for pulse or intermittent release (PR). The solid circle is for quick release (QR).

  13. Delay Start
    To set a delayed start, touch the Delay field. When the Delay function is on, the clock icon on the right will show the second hand ticking.

Instant Pot Ultra Symbols and Icons

The Instant Pot Ultra model doesn’t have any icons, but it does have a display panel with a lot of information. Here’s a summary of the display panel. [Find out more about how to use the Instant Pot Ultra]

The Instant Pot Smart WiFi model has a display that’s similar to the Duo Plus, but with a few WiFi-related extras.

    Timer 1 shows when the first timer is being programmed and Timer 2 is displayed with the second timer is being programmed.
  8. AM/PM
    The Instant Pot Smart Wifi allows the current time to be set with a 12-hour clock that shows AM or PM.
  9. Pressure Level
    Shows whether High or Low pressure has been selected.
  10. Smart Program Mode
    Shows whether More, Normal or Less is selected, which indicates how long to cook (with some exceptions such as Yogurt mode).
  11. Script Running
    The symbol with arrows in a circle indicates that a script is running.

Status Messages

There are many different types of messages and information that appear on the display panel.

LidThe Instant Pot lid is not secure or the lid is on during Saute mode.
OnThe Instant Pot is preheating.
BoilThe Yogurt smart program is in Pasteurize mode.

In Delay Start mode – a countdown timer that displays how long until the selected smart program starts. On some models with a clock, this number may be the actual start time.
During cooking – a countdown timer that displays the cooking time left in the selected smart program.
In Keep Warm mode – a count-up timer that displays the length of time that food has been warming.
EndSmart program has completed.
Burn or Food BurnThe pressure cooker cannot come to pressure because there isn’t enough liquid or food has burned and is stuck to the bottom of the inner pot. Find out more about the Instant Pot Food Burn Message.
No PrThere is not enough pressure.
PrSEThere is excess pressure.

Misir wot (misr wat or misir wat) is a mainstay on menus at Ethiopian and Eritrean restaurants, particularly as part of the veggie combo. I love it because it’s similar to Indian dal recipes.

A spicy Ethiopian lentil stew made with onions, lentils, berbere spice, and spiced clarified butter, miser wot is traditionally served over injera, a large sourdough crepe made out of a fermented millet-like grain known as teff flour.

Injera has the flavor of sourdough bread or South Indian dosa but is much more sour. Traditionally, a variety of entrées and side dishes are heaped on the injera in tidy piles, and the injera is torn off in pieces and used to pick up bites of the various stews.

My kids aren’t big fans of injera, so I like to serve these Ethiopian red lentils with brown rice, white rice, or crusty bread.

This misr wat recipe is a streamlined and quick version that can be made in the Instant Pot or on the stovetop. It’s simple enough that you can make it on a weeknight, and because there’s no meat in this lentil recipe, you can also make it ahead of time and leave it on Keep Warm mode.

🌶️ Berbere: Berbere (pronounced bare-bare-eh) is a spicy chili pepper blend essential to Ethiopian cooking that gives this misir wot recipe intense flavor and spice. Similar to garam masala but much spicier! The spiciness varies by brand – Penzey’s is quite hot while Silk Road is milder. Use as much or as little as your taste dictates.

🏡 Homemade Berbere: Make your own with this easy recipe (makes about ⅓ cup). Add less paprika and more cayenne for a spicier mix:

  • 3 tablespoon paprika
  • 1 tablespoon cayenne pepper
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon ginger powder
  • 1 teaspoon fenugreek powder
  • ¼ teaspoon allspice powder
  • ¼ teaspoon nutmeg powder
  • ¼ teaspoon cinnamon powder
  • ¼ teaspoon ground cloves
  • ½ teaspoon cardamom powder

🧅 Onions: Traditional misir wat uses shallots, but red or yellow onions work great. Traditionally, the shallots are sautéed without fat until they become paste-like, but I sauté them in niter kibbeh or ghee instead. On the stovetop, cook until deep golden brown. In the Instant Pot, sauté for less time since pressure cooking breaks them down further.

🫘 Lentils: Use red lentils (also called pink lentils, Egyptian lentils, or masoor dal). Split red lentils work perfectly, or use whole red lentils (pressure cook 15-20 minutes for whole). You don’t need to soak them since they cook fast, but rinse them well. If the lentils don’t cook properly, they may be old and you may need a new bag.

🧈 Niter Kibbeh: This spiced clarified butter is like ghee but simmered with aromatics for extra flavor. You can substitute ghee for simplicity, but niter kibbeh adds an authentic dimension. Buy it or make your own by adding these to a ghee recipe:

  • 1 small onion (quartered)
  • 2 garlic cloves (whole)
  • 1 teaspoon whole peppercorns
  • 1 cinnamon stick (2-inch piece)
  • ½ teaspoon cumin seeds

Strain them out with the milk solids and use the leftover niter kibbeh in other recipes!

💦 Liquid and Cook Time: Some readers like the misir wat to be thicker and more chewy so they use less water (2 cups) and release the pressure after 5 minutes. Feel free to reduce the quantity of water and do a quick release for firmer and chewier lentils.

Can I double the recipe?

Double the recipe, and keep the same cook time. Make sure the contents don’t go over the ½ full mark.

Can I make this recipe vegan?

This recipe uses ghee or niter kibbeh which are not vegan. You can use olive oil to make it vegan.

How long does misir wot keep?

Store in the refrigerator for up to 5 days or freeze for up to 3 months. The flavors actually improve the next day, so I like to make it ahead!

  1. Put the Instant Pot in Saute mode. Once the inner pot has preheated, add niter kibbeh or ghee to the inner pot and let it melt. Add onions, garlic, and ginger. Saute onion mixture until the onions are golden.  Add a few tablespoons of water to deglaze the inner pot if needed. Press Cancel. The spices added in the next step will cook in the residual heat.
  2. Add berbere and salt. Saute for 30 seconds or until fragrant. Don’t let the spices burn! Deglaze with a tablespoon or two of water if necessary, to make sure nothing is stuck on the bottom.
  3. Stir in the tomato paste and then the water.
  4. Stir in the lentils.

  1. Close the lid.
  2. Select Pressure Cook mode and cook on high pressure for 6 minutes.
  3. The display will go from On to 06:00. The float valve will go up after a few minutes. The display will count down to 00:00.
  4. Do a 10 minute natural release of pressure or a full natural release. Once the float valve goes down, the lid can be opened.

♨️ Stovetop Instructions

  1. To make Ethiopian lentils on the stovetop, cook the onion mixture till deep golden brown in a heavy medium saucepan over medium heat, and then lower to medium-low.
  2. Add spices, lentils, and tomato paste.
  3. Simmer the lentils in 3 cups of water, stirring often and adding water as needed, until the lentils are cooked through to your liking and the mixture is a thick stew, about 30 minutes.

  • 2 cups onion diced
  • 2 tablespoon niter kibbeh or ghee or butter [See Note 1]

  • 1 cup red lentils rinsed and drained

Instructions

Instant Pot Pressure Cooker

  • Press Saute and add niter kibbeh to the inner pot of the Instant Pot.
  • Once the niter kibbeh has heated up, add onions, garlic and ginger. Stir until onion mixture is golden brown, about 8 to 10 minutes. Press Cancel. The spices in the next step will cook in the residual heat.
  • Add berbere and salt and stir to coat, about 30 seconds. Make sure there's nothing stuck to the bottom of the inner pot – deglaze as needed.
  • Add tomato paste and stir for 30 seconds. If anything gets stuck to the inner pot, deglaze with a tablespoon or two of water.
  • Stir in the water and lentils.
  • Close the lid and pressure cook on High Pressure for 6 minutes. [See Note 2]
  • Do a natural pressure release. [Read More: The Different Pressure Release Methods]
  • Open the Instant Pot and stir the Ethiopian lentils. Garnish with cilantro, if using.

Stovetop

  • In a medium heavy-bottomed saucepan, heat niter kibbeh over medium heat.
  • Add onions, garlic and ginger. Stir for a few minutes till onions begin to turn golden. Lower the temperature to medium-low and saute till onion mixture is a deep golden brown, stirring frequently. It may take 15 to 20 minutes or longer for the onions to become nicely browned. Make sure they don't burn, and deglaze as needed.
  • Stir in berbere and salt, and saute for about 30 seconds to 1 minute.
  • Stir in tomato paste and lentils. Saute for 1 to 2 minutes, deglazing with water if needed.
  • Add 3 cups of water and simmer covered, stirring occasionally, until the lentils are cooked to your liking and the stew has thickened, about 30 minutes. Add more water, if needed, in tablespoon increments.
  • Adjust with more berbere and salt, according to your tastes.
  • Garnish with cilantro, if desired.

  • Note 1: Niter kibbeh is a spiced clarified butter that can be made at home or purchased. See the blog post tips for a recipe. Ghee is a good substitute but it will lack the flavor of niter kibbeh.
  • Note 1: Some readers have mentioned that they like to cook the misir wat for 4 or 5 minutes and do a 5-minute natural release to make it firmer and chewier.

This Instant Pot vegetarian risotto is an Indian-inspired pressure cooker risotto recipe that’s a hearty and delicious one-pot meal. This recipe is suitable for vegans, too. The bright, warming flavors of coconut curry and the creaminess of risotto make this a family-pleasing recipe that’s healthy and easy enough for a weeknight!

Traditionally, when risotto is made on the stovetop, you add liquid in small increments, stirring constantly. It’s a bit time-consuming and very hands-on. Instant Pot risotto is so much easier to make. No stirring, just set it and forget it!

Italian risotto is traditionally served as a first course but this Indian risotto makes a great main course especially when you add some protein. Indian spices, coconut milk, and chickpeas make this vegetarian recipe delicious and comforting but also filling!

Some people mistakenly believe that “curry” requires curry powder. In fact, different curries are made with different combinations of Indian spices, such as coriander, cumin, turmeric, chili powder, garam masala, black pepper, etc., which this recipe uses.

This is one of the best Instant Pot risotto recipes that I make. I love how the arborio rice and coconut milk make the recipe so rich and creamy. If you don’t own an Instant Pot, making this coconut risotto so easily is a great reason to go out and get one right now!

🌶️ Spices: Use Kashmiri chili powder for color with mild heat. Substitute with a lesser quantity of cayenne. Or use 2-3 teaspoon curry powder to replace all spices. I recommend a fresh jar of curry powder.

🍚 Rice: This recipe is best with arborio. Other Italian medium-grain rice may work, but you would need to test it out.

🥘 Broth: Use a liquid measuring cup for the water/coconut milk. Use vegetable or chicken broth for extra flavor, and adjust salt.

🧈 Ghee: You can use ghee instead of vegetable oil to enhance flavor.

🍅 Tomatoes: Add a cup of diced tomatoes if you want a tangy flavor. Add them on top without stirring to prevent burn message.

🫘 Chickpeas: Use cooked chickpeas or black-eyed peas. If using canned beans, drain and rinse first.

🔥 Burn Message: Rice can be stirred in, but as a precaution against the food burn error, the recipe tells you to layer liquid and chickpeas first, add rice on top, and submerge without stirring.

How to Make Curried Risotto

  1. Turn on Saute Mode
  2. Saute onion, garlic, and ginger
  3. Saute spices and add liquids
  4. Add chickpeas and rice
  5. Pressure cook
  6. Natural release
  7. Stir and garnish with cilantro

  2. Press Cancel. The spice will cook in the residual heat. Stir in coriander, cumin, garam masala, turmeric, chili powder, and salt. Saute for 30 seconds or until fragrant. Don’t let the spices burn! Deglaze with a tablespoon or two of water if necessary.
  3. Stir in water and coconut milk. Stir in chickpeas. Add the arborio rice, but don’t stir.
  4. Just push down with a spatula so the rice is submerged. *

    * We’re doing this out of an abundance of caution to avoid a burn message.

  2. Select Pressure Cook mode and cook on high pressure for 7 minutes.
  3. The display will go from On to 07:00. The float valve will go up after a few minutes. The display will count down to 00:00.
  4. Do a natural release of pressure. Once the float valve goes down, the lid can be opened.

  1. Carefully stir the coconut milk risotto using a large spoon. Let the risotto rest (lid open) for 5 to 7 minutes before serving.
  2. Garnish with cilantro if desired.

Instant Pot chickpeas (garbanzo beans) are easy to make and the recipe is hands-off. Make a big batch and freeze in smaller portions. Use them as you would canned garbanzos. Pressure cooking chickpeas is a healthier way to enjoy them compared to buying the canned version.

Chickpeas are my favorite legume. I honestly love to eat them plain, sometimes straight from the pot! But they’re even tastier in curries (see my chana masala or chickpea tikka masala), salads, soups (see my Moroccan chickpea stew), or fritters (like falafel).

The words chickpeas and garbanzo beans can be used interchangeably, though I tend to use chickpeas more often.

I’ve noticed garbanzo beans have become quite popular as more of my readers have switched to vegetarian and vegan diets. They’re such a great protein source.

The canned ones can taste a bit metallic to me, and they’re often mushy. With the Instant Pot, I can get them just right – tender but with a slight bite.

Don’t get me wrong, I keep canned chickpeas in my pantry for emergencies. But when I have the time, I prefer making them in my Instant Pot.

And you don’t have to soak them overnight, with this recipe. If you prefer soaking first, try my dry beans quick soak method, then pressure cook for about 10 to 15 minutes less.

🧽 Washing: Washing beans is essential because there can be rocks and other foreign objects in a package of dry beans.

⏳ Cook Time: The chickpeas will be cooked but not very soft at the 1-hour mark. To get soft, fall-apart chickpeas, cook them for 75 minutes.

🧂 Salt: Some claim that adding salt increases cooking time, but I haven’t noticed a difference. I add one teaspoon of table salt per cup of dried garbanzos. For low-salt, add ½ teaspoon.

🥫 Canned vs Dried: Yes, canned garbanzos are convenient. But they also have preservatives and sodium, and are overcooked and mushy.

💦 Soaking: The longer you soak the chickpeas, the lower the cooking time. Soaking chickpeas for 10 or more hours allows you to pressure cook the chickpeas in less than 20 minutes! You can soak the traditional way or use my Instant Pot hack for soaking beans. But you don’t need to soak the chickpeas before pressure cooking.

How do you substitute dry chickpeas for canned chickpeas?

If your recipe calls for a can of chickpeas, that’s equivalent to 1 ½ cups cooked chickpeas. ½ cup dried chickpeas make 1 ½ cups cooked chickpeas.

What if the chickpeas are undercooked?

Close the lid again, pressure cook for another 5 to 10 minutes, and then do a natural release. Chickpeas that were in storage for too long lose moisture and become dry.
If you happen to have a batch that’s tough to cook, soaking the garbanzo beans and adding ¼ teaspoon of baking soda to the cooking water might help.

How many cups of dried chickpeas make up a can of cooked chickpeas?

½ cup dried chickpeas makes 1 ½ cups cooked chickpeas (about one can).

⏲️ How to Make Chickpeas in the Instant Pot

  1. Add washed and drained chickpeas to the inner pot.
  2. Add water to the inner pot. Close the lid and pressure cook for 60 minutes. Let the pressure release naturally.
  3. Open the lid. (If they’re not cooked enough, pressure cook for another 15 minutes.)
  4. Drain and use chickpeas in recipes, or cool them and freeze in a Ziploc bag for future use.
