Traditional Onam Sadhya (Sadya) Recipes – Kerala Feast Dishes

Onam sadhya, also spelled sadya, is one of the most important meals in Kerala: a full South Indian vegetarian feast served on a banana leaf, built from dishes that each have a specific role.

This collection has recipes that show up on my own family’s Onam celebration every year – parippu, sambar, ishtu (stew), olan, pachadi, thoran, mezhukkupuratti, kootu curry, a ginger chutney that ties the whole meal together, and payasam to finish off.

What makes a sadya different from regular Kerala food is the sheer range packed onto one banana leaf, and how much of it runs on coconut in different forms – ground into a paste, fried until deep brown, pressed into milk.

Nothing here is difficult on its own. The work is in the number of dishes, so I’ve tried to note which ones can be made a day ahead and which need to be fresh.

Every one of these is a recipe I’ve made for Onam myself. I only cook Onam sadhya for my immediate family and don’t cook every dish on this list. I do what I can and I encourage you to do the same.

Lentils

The two lentil-based dishes on the plate – one mild and simple, one bold and tangy.

Kerala Parippu Curry (South Indian Dal with Coconut)
Split yellow moong dal cooked down and finished with a ground coconut-cumin paste and a curry leaf tempering. It's mild – the flavor comes from the coconut and curry leaves rather than heavy spicing – and it's ready in under 30 minutes in the Instant Pot. This is the dish I compare to mac and cheese: familiar, comforting, and the one I'd miss most if it were left off the table.

Instant Pot Sambar
My mom's recipe – a thick, boldly flavored vegetable lentil stew, nothing like the watery sambar you get at a lot of restaurants. Toor dal, tomatoes, and a mix of vegetables (she uses okra, eggplant, and cucumber) simmer with a homemade spice blend of coriander, fenugreek, and asafoetida instead of store-bought sambar powder. Coconut is optional, but I recommend it for the thicker, richer version.

Coconut Milk Stews

Two versions of the same coconut milk stew, one built around potatoes alone and one with a full mix of vegetables.

Kerala Vegetable Stew Recipe
The fuller version of ishtu, with carrots, potatoes, and peas simmered in coconut milk, plus optional whole spices like cinnamon and cardamom. This is the dish that takes me back to Sunday mornings as a kid, eating it with appam. The onions stay pale here on purpose – browning them changes the color of the whole stew.

Kerala Potato Stew Recipe (Ishtu)
A mild coconut milk curry with potatoes, ginger, and curry leaves – no heavy spice blend, just enough green chili for a little warmth. Best made the same day you serve it, since coconut milk can curdle on reheating.

Authentic Kerala Olan
One of the mildest dishes on the sadya banana leaf – just cucumber (or zucchini) and black-eyed peas simmered in coconut milk with a little green chili and curry leaves. It's meant to sit quietly next to the spicier curries, not compete with them.

Pachadis

Coconut-yogurt sides built around fruit or vegetables, served at room temperature so they're easy to make ahead.

Traditional Kerala Mango Pachadi Recipe with Pineapple Variation
Ripe-but-firm mango cooked down with turmeric and chili, then folded into a coconut-yogurt paste. Swap in pineapple for the pineapple pachadi variation – same method, a little more tang.

Traditional Kerala Cucumber Pachadi Recipe | Cucumber Kichadi
A cooling side similar to North Indian raita, made with cucumber, coconut, and yogurt. It comes together in under 20 minutes and works just as well outside of sadya season as a side for any Indian meal.

Dry Vegetable Curries

A dry coconut stir-fry, a dry-fried side without coconut, and a coconut-and-chickpea curry – all built to use whatever vegetables you have on hand.

Green beans and carrots stir-fried with fresh coconut and popped mustard seed. The carrots add sweetness against the beans' earthiness, and the same base method works with cabbage, beets, or spinach if you want to rotate it in outside of Onam.

Spinach Thoran (Cheera Thoran)
Frozen spinach stands in for the usual green beans or cabbage here, and a spoonful of toasted moong dal or rice can be mixed in with the coconut for a little bite. Comes together just as fast as the carrot version above.

Fried Potatoes Kerala Style
Kerala Potato Fry (Potato Mezhukkupuratti)
Potatoes cut into long strips and pan-fried with mustard seed, curry leaves, and a simple spice mix until browned – no coconut in this one, which sets it apart from thoran. Quick enough for a weeknight, but it earns its spot on the sadya banana leaf too. Works with sweet potato, yucca, or unripe plantain in place of potato.

Traditional Kerala Kootu Curry Recipe (Black Chickpeas & Mixed Vegetables)
Black chickpeas and mixed vegetables in a curry built on coconut used two ways – ground into a paste for the base, then fried separately and stirred in at the end for a deeper, toastier flavor. Traditionally made with elephant yam and plantain; I use potato, eggplant, and cucumber since they're easier to find.

Authentic Inji Curry Recipe – Kerala Ginger Curry (Puli Inji)
A tangy-sweet ginger chutney made from fresh ginger fried until crisp, then simmered with tamarind and jaggery. More pickle than curry, and it's the dish that ties a sadya plate together – a spoonful mixed into plain rice changes the whole bite. It keeps in the fridge for two weeks and gets better with time, so this is one to make a few days ahead.

Semiya Payasam
A creamy vermicelli pudding made with roasted vermicelli, milk, and condensed milk, finished with fried cashews, raisins, and cardamom. This is what closes out the meal, served in a small steel cup after everything else has been cleared. It tastes good warm, cold, or at room temperature, and it actually improves after sitting a few hours, so make it the day before if you're short on time.
