    This is a refreshing Mediterranean salad that can be served with Greek, Middle Eastern or even Italian dishes. Kalamata olives add just the right touch to the salad, so don’t substitute black olives. It’s a snap to put together and so tasty. Try to use the freshest ingredients you can find – they make a big difference.


    Mediterranean Salad

    This is a refreshing Mediterranean salad that can be served with Greek, Middle Eastern or even Italian dishes. Kalamata olives add just the right touch to the salad, so don’t substitute black olives. It’s a snap to put together and so tasty. Try to use the freshest ingredients you can find – they make a big difference.

    To make this mediterranean salad more substantial, you can add feta cheese, chickpeas, and even grilled pita bread pieces.

    This Mediterranean salad is a refreshing salad that tastes best with fresh summer tomatoes.  It's great as an accompaniment to Middle Eastern and Mediterranean main dishes.

    Ingredients

    • 2 cups seeded and diced Roma tomatoes
    • 1/4 cup chopped sun-dried tomatoes
    • 1 cup cucumber - peeled, seeded, and diced
    • 1/3 cup diced scallions
    • 1/3 cup kalamata olives - pitted and halved
    • 1/2 tsp garlic - minced
    • 1 1/2 Tbsp extra-virgin olive oil
    • 1 Tbsp red wine vinegar
    • 2 Tbsp fresh parsley - chopped
    • 1 Tbsp fresh oregano - chopped
    • Salt and Pepper - to taste

    Instructions

    • Toss all ingredients together in a large bowl.
    • Season with salt and pepper.
