Mediterranean Salad
Ingredients
- 2 cups seeded and diced Roma tomatoes
- 1/4 cup chopped sun-dried tomatoes
- 1 cup cucumber peeled, seeded, and diced
- 1/3 cup diced scallions
- 1/3 cup kalamata olives pitted and halved
- 1/2 tsp garlic minced
- 1 1/2 Tbsp extra-virgin olive oil
- 1 Tbsp red wine vinegar
- 2 Tbsp fresh parsley chopped
- 1 Tbsp fresh oregano chopped
- Salt and Pepper to taste
Instructions
- Toss all ingredients together in a large bowl.
- Season with salt and pepper.
