This Vegetarian Instant Pot Moroccan Stew is so delicious that you won’t miss the meat! The stew has a dynamite combination of ingredients that gives it a rich, complex flavor profile that you’re going to love.

This was so utterly delicious!!! Loved it!! I used 2 lemon zest as I didn’t have the other lemon item on hand.





  •  olive oil • onion  • garlic • ginger • salt • black pepper powder • coriander powder  • cumin powder • turmeric powder


  • cayenne pepper • vegetable broth • butternut squash • carrots • preserved lemon • diced tomatoes  • chickpeas  • saffron • cilantro 


saute onions


Heat up Instant Pot, add oil and heat till hot. Add onion, garlic, ginger until onions are soft.

add stew ingredients


Add spices and saute until fragrant. Add butternut squash, carrots, preserved lemon, tomatoes, and broth.


pressure cook

Pressure cook the pork and do a natural release of pressure after pressure cooking is complete.

add chickpeas, saffron


Open the lid and stir in cooked chickpeas and saffron. Heat in Saute mode. Garnish with cilantro.
