• Yellow curry paste • Coconut milk • Curry powder • Chicken • Potatoes • Fish sauce • Brown sugar • Lime juice • Onion  • Carrots • Lime leaves

Stir together curry paste, curry powder and half the coconut milk until bubbly, a minute or two. Good quality ingredients make a big difference!

Add remaining coconut milk, diced chicken, and potatoes. Stir and close the Instant Pot.

Pressure cook the chicken and do a quick release of pressure after cooking is complete.

Stir in fish sauce, brown sugar, lime juice, onions, carrots, and lime leaves. Cook until vegetables are crisp-tender.

heat through

Taste and adjust flavors as needed. Heat through on Saute mode. Remove from heat. Serve over jasmine rice. Enjoy!
