INSTANT POT thai red curry

This Instant Pot Thai Red Curry with Chicken is a restaurant-quality recipe that's easy to make and perfect for a busy weeknight meal.  [Instant Pot and Stovetop instructions included.]


Thai red curry paste Coconut milk Chicken thighs Chicken broth Fish sauce Brown sugar Lime juice Bell peppers Carrots Onions Lime leaves Thai Basil

saute curry paste


Stir together red curry paste and half the coconut milk until bubbly, a minute or two. Good quality ingredients make a big difference!

add coconut milk, broth, and  chicken


Add remaining coconut milk, broth, and diced chicken. Stir and close the Instant Pot.

pressure cook


Pressure cook the chicken at high pressure for 4 minutes. Do a quick release of pressure after cooking is complete.

saute vegetables


Add fish sauce, brown sugar, lime juice, vegetables, and lime leaves. Stir and cook on Saute mode until crisp-tender.



Press Cancel and garnish the Instant Pot Thai Red Curry with Thai basil leaves. Remove from heat. Enjoy!
