Galangal, lemongrass, lime leaves,  coconut milk, and other spices give this  authentic Instant Pot Thai Coconut Soup a special flavor that’s the perfect combination of sour, salty, sweet and spicy!

The best coconut soup recipe I have ever made. Very authentic recipe and very easy to make.





  •  galangal • lemongrass  • chicken broth  l• ime leaves  • green onions  • chicken thighs • coconut milk 

INGREDIENTS (continued)

  • fish sauce • lime juice • brown sugar • Thai chili jam • oyster mushrooms   • cilantro 

Add soup ingredients


Add chicken broth, galangal, lemongrass, lime leaves, green onions (white parts) and chicken to the Instant Pot inner pot.


pressure cook

Pressure cook the pork and do a natural release of pressure after pressure cooking is complete.

add flavorings


Remove galangal, lemongrass. In Saute mode, stir in coconut milk, fish sauce, lime juice, and palm or brown sugar, Thai chili paste, mushrooms.

heat through


Adjust seasonings to taste. Heat through in Saute mode. Garnish with green onions, cilantro.
