Instant Pot Red Beans and Rice is an authentic New Orleans recipe made with red beans, andouille sausage and ham hock. Perfect for a family dinner or a Mardi Gras meal!

INGREDIENTS

– vegetable oil – andouille sausage – onion – bell pepper – celery – garlic – dried thyme – cayenne pepper

saute andouille sausage

Saute andouille sausage until browned. Transfer sausage to a bowl and set aside.

saute vegetables

Saute onion, bell pepper, celery, and garlic until the onion is translucent. Deglaze as needed.

saute spices

Add spices and stir to coat, about 30 seconds. Add some broth to deglaze, scraping up all brown bits.

add broth, ham hock and red beans

Add broth, bay leaves, ham hock, red beans and stir to combine.

pressure cook

Pressure cook the red beans and do a natural release of pressure after cooking is complete.

shred ham hock

Open the Instant Pot and remove the ham hock and chop into bite-size pieces. Discard bone.

mash red beans

Remove about 1 cup of beans to a small bowl and mash with a fork.

return ham hock, beans and sausage to pot

Return ham hock, beans and andouille sausage to the Instant Pot.

heat through

Stir everything together and heat through on Saute mode until thickened.

serve and garnish

This recipe tastes amazing the next day, so it's a great make-ahead recipe. Serve over rice and garnish with parsley and green onions.
