arroz con pollo

saute chicken

Heat oil in Instant Pot and add boneless skinless chicken thighs.  Saute until chicken is lightly browned.

remove chicken

Once the chicken is browned, transfer it to a bowl and set aside to be added back later.

Deglaze with a bit of broth and add onions, peppers, celery and garlic. Saute till the onions are translucent.

Add cumin, oregano, annato, cayenne pepper, white pepper, black pepper, and salt. Saute spices until fragrant.

Add broth

Add in broth, bay leaves and reserved chicken. Stir everything together until combined.

Add tomatoes

Add the tomatoes and cilantro stems, and gently spread out with a spatula. Don’t stir.

add rice

Add the rice but don’t stir it in. This will help you avoid the burn message that some Instant Pots can get.

submerge rice

Push the rice down into the broth gently with a spatula so it's submerged, but without stirring.

pressure cook

Pressure cook the chicken and rice and do a 10-minute natural release of pressure.

Add cilantro and peas

Open the lid and add cilantro and peas to the cooked arroz con pollo.

Gently stir all ingredients and let the rice rest before serving. Serve with hot sauce on the side if desired.
